In 1994 I was diagnosed with celiac disease, which led me to create Celiac.com in 1995. In 1998 I created The Gluten-Free Mall, Your Special Diet Superstore! which was also another Internet first—it was the first gluten-free food site to offer a shopping cart-style interface, and the ability for people to order gluten-free products manufactured by many different companies at a single Web site.
I am also co-author of the book Cereal Killers, and founder and publisher of Journal of Gluten Sensitivity.

1-2 cups of water
1 package of chicken cut up for a stir fry
5 peaches, diced
1 yellow pepper, diced
1 red onion, diced
2-3 cloves of garlic
cilantro leaves to taste
optional (1 Tablespoon fresh lime juice)
pepper to taste
Cook chicken, garlic, and ½ of the red onion in the water until the chicken is done. I like to let the meat sit in the juices for a while. Place all other ingredients including the other ½ of the red onion in a bowl. Mix cooked ingredients with uncooked ingredients. Serve.
