Our chefs combine buckwheat, potato flour and other ingredients to create secret recipes that we think outperform products currently available in the U.S. We certify that all of our products meet the standards of safety established by the Codex Alimentarius,
which defines gluten free foods as those with less than 20 parts per million total gluten content.
Most of our products contain specially formulated wheat starch, which means it has been processed to remove all but a trace amount of gluten. In Europe, this type of wheat starch may be used in gluten-free products, as long as the
total gluten content of the wheat starch itself is less than 200 parts per million.
If this wheat starch is an ingredient in a food product that contains other ingredients, the total gluten content of that food
can not exceed 20 parts per million.
These trace gluten levels, and the use of specially formulated wheat starch are under consideration by the FDA for the definition of gluten-free in the United States.
