    Yorkshire Pudding (Gluten-Free)

    (Makes 12 regular sized muffins)

    Ingredients:
    2/3 cup of gluten-free flour mix
    1/3 cup of corn starch or potato starch (we used corn starch)
    ½ teaspoon salt (or up to 1 teaspoon to taste)
    ¼ teaspoon gluten-free baking powder
    ¼ teaspoon xanthan gum
    2-3 whole eggs
    1 cup milk or half & half
    Drippings from roast beef (or use vegetable oil)

    Directions:
    Preheat oven to 425F.

    Mix all dry ingredients well.  Beat eggs separately, then add to dry ingredients, mixing well with electric hand mixer.  Finally, add the milk or cream and beat for a couple of minutes (should be the consistency of thick cream).

    Pour a little beef drippings into each muffin cup.  I use about 1 tsp, in each, but we like ours "greasy".  You really just need to line the bottom of each cup for this to work.  Then put the muffin tins into the oven and heat until the oil is VERY hot.

    Distribute the batter evenly into the 12 muffin cups and bake at 425F for 15 minutes.  If the puddings are well risen by then, turn the oven down to 375F and finish cooking them (should be about 5-10 minutes)  You can tell by looking at them how moist they are.  Just cook until they look right to you.

    My 6 year old loved these ... she was so sad that she would miss out on her Yorkshire pudding with roast so I made her a batch ... so good that I'm making more, freezing them and using them instead of gluten free buns for her!!! Tomorrow she's having a Yorkshire pudding roast beef sandwich in her lunch. So thrilled to find a "bread" she likes. Now to try to make gluten free gingerbread for her class project!!!

    These were great. Very Yorkshire pudding tasting. Very slight differences in taste and texture from the gluten-ful original, but minor ones.

    Easy recipe. Worked first time I tried it. Will try for hotter fat and more rise next time. Very authentic taste and really yummy. Thank you.

    Awesome, first time and they turned out perfect, even better than regular ones. And the roast beef sandwich idea is great, yes...more gluten free yummy choices!

    This recipe comes to us from Phyllis Chinn.
    2 cups gluten-free white bread (crusts removed) I use the recipe from Betty H. for cornstarch bread - its wonderful + extra 2 eggs
    Crumbled smoked bacon (leave it out if you like)
    1/8 teaspoons cayenne
    ¼ teaspoons dry mustard
    2 - 3 Tbsp cream
    2 teaspoons lemon juice
    ¼ teaspoons Cajun spice
    salt
    pepper
    Mix above in food processor until well blended. Put in bowl and add 2 cups picked over crab meat and fold together. If too dry, add a little cream; if too moist add a few more bread crumbs Make into patties and roll in dried bread crumbs - fry in oil until brown. Drain on paper towels.

    This recipe comes to us from Mary Burgdorff.

    2 packages (16 oz.) frozen has browns, thawed (or substitute refrigerated-style)
    2 cups chopped cooked ham
    ½ - 1 cup sliced green onions
    3 cups shredded cheddar cheese
    10 eggs, beaten
    1½ - 2 cups milk
    1 teaspoon salt
    2 teaspoons dry mustard
    Dash cayenne pepper
    Paprika to taste
    Preheat oven to 350F degrees.
    Layer bottom of 13” x 9” pan with hash browns.  Sprinkle ham, green onions and cheese evenly over potatoes.  In bowl, combine eggs with milk, salt, mustard and cayenne.  Pour over all.  Sprinkle with paprika.  Bake in preheated oven 40-45 minutes or until firm.  You can add additional ingredients, such as mushrooms, peppers, etc., but then allow about 60 minutes to bake.  Makes 12 large servings.

    I based this recipe on one from  UKTV Food.  This pie has a crisp golden pastry and succulent rich filling.  Pureed beans and onion thicken the sauce.  If you don't want to puree them just add them to the rest of the ingredients at the start of the slow cooking stage.
    Serves 6-8
    Ingredients:
    1 pack diced venison (c340g)
    1 pack mushrooms (c 200g)  I used chestnut
    1 bottle beer - I used Nick Stafford's Hambleton Ales GFA Gluten and Wheat Free Ale
    2 onions - chopped
    2 carrots- diced
    3 cloves garlic - squashed
    vegetable oil
    1 tsp. fresh thyme leaves or 1/4 tsp. dried
    stock / water - I used chicken as I always have that available in the freezer.
    1 small can beans -  cannellini / borlotti or gluten-free baked beans
    1 tbsp. tomato paste
