    Chicken Curry (Gluten-Free)

    Ingredients:
    4 teaspoons curry powder
    1 teaspoon cumin
    1 teaspoon corriander
    2 minced garlic cloves
    1 large onion diced
    1 chicken breast diced
    1 pack rice noodles
    Gluten-free soy sauce
    1 red pepper (capsicum) de-seeded and diced

    Directions:
    Brown chicken and onions in a pan. Add all of the spices with some hot water and cook the mix for about 10 minutes - add water if necessary so that it won't dry out. Meanwhile, cook rice noodles according to packet instructions. Add red pepper to mix and let cook for about a minute, then drain the noodles and add to the curry pan and add soy sauce to taste. Mix well to coat noodles in curry sauce and serve.

    2 - 15 oz cans of chick peas
    2 Tablespoon garlic
    2 teaspoon cumin
    1 teaspoon turmeric
    6 minced scallions
    large handful of parsley
    1 egg
    1 Tablespoon lemon juice
    A few dashes of cayenne pepper
    ½ cup rice flour
    Put beans in a food processor and mash as much as possible. Put everything else except flour in the food processor and continue to chop it up until thoroughly blended. Put in a bowl and add flour until you get a firm, thick batter. Form into balls or patties and deep fry in vegetable oil. Serve with yogurt-dill sauce (2 Tablespoon Yogurt in a cup of plain, low-fat Yogurt).

    150 ml tepid milk
    275g (10 oz.) rice flour
    60 grams tapioca flour
    ½ teaspoon salt
    1 teaspoon gluten free baking powder
    2 teaspoons caster sugar
    2 teaspoons dried active yeast
    2 teaspoons vegetable oil
    150 ml plain/natural yogurt
    1 egg, lightly beaten
    1 teaspoon xanthan gum
    In a bowl mix tepid milk with 1 teaspoon sugar and the yeast, then sit bowl in warm place for 4-5 minutes.
    Sift the flours, Xanthan gum, salt, baking powder into a bowl or food mixer. Add remaining sugar, oil, yogurt, egg and mix until smooth.
    Preheat oven to the highest setting. Make dough into 6 equal sized balls. Roll out balls into a tear shape that is ¼ inch thick (use rice flour if necessary to prevent sticking)....

    1 can garbanzo beans
    ¼ cup tahini
    ¼ cup oil packed sun dried tomatoes
    6 cloves garlic
    ½ cup water
    ¼ teaspoon paprika
    Pinch of cumin
    Place all ingredients in a Cuisinart, and blend until smooth.

    Hummus is naturally gluten-free and high in protein, making it an excellent choice for a power snack. Finding a pre-made gluten-free hummus  is not that difficult, but to avoid possible cross-contamination, it is always better to make it yourself. The nice thing about this recipe is that it is very basic, and you can add other things like sun dried tomatoes or bell peppers to give it the flavor you prefer.
    Traditional Hummus (Gluten-Free)
    Ingredients:

    1 cup dried garbanzo beans 7 cups water - for cooking 1 teaspoon baking soda 1 ¼ teaspoons salt- or to taste ½ teaspoon minced garlic ¼ cup tahini ½ cup fresh squeezed lemon juice To Make:
