In 1994 I was diagnosed with celiac disease, which led me to create Celiac.com in 1995. I created this site for a single purpose: To help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives. Celiac.com was the first site on the Internet dedicated solely to celiac disease, and since then it has become an invaluable resource to people worldwide who seek information about celiac disease and the gluten-free diet.

In 1998 I created The Gluten-Free Mall, Your Special Diet Superstore! which was also another Internet first—it was the first gluten-free food site to offer a shopping cart-style interface, and the ability for people to order gluten-free products manufactured by many different companies at a single Web site.

I am also co-author of the book Cereal Killers, and founder and publisher of Journal of Gluten Sensitivity.

Our cookie bars are made from quality ingredients such as Bob’s Red Mill gluten-free oats, organic brown rice flour and Enjoy Life gluten, soy, dairy & nut free chocolate chips. Additionally, our gluten-free cookies are a rich source of fiber, iron, calcium and protein. Please note that our gluten-free cookies contain eggs and/or coconut and are made in a facility where wheat, gluten, nuts, soy and milk are present. We currently offer two flavors:

Gluten-Free Coconut and Chocolate Chip is made with our unique blend of gluten-free flours and oats along with unsweetened coconut flakes and allergy friendly chocolate chips. This is the favorite cookie among the general population. Most don’t even realize this is a gluten-free cookie. 

Gluten-Free Cinnamon and Chocolate Chip is also made from our unique blend of gluten-free flours and oats along with cinnamon and allergy friendly chocolate chips.  This cookie is a favorite among those who enjoy the sophistication of chocolate and spice. 

Squirrel’s Bakery is a small family owned cookie manufacturing business based in Virginia Beach, Virginia and was founded in 2009. We are compliant with Virginia Department of Agriculture and Consumer Services (VDACS) and Virginia’s Finest guidelines and regulations.
