    Milk-Braised Pork Shoulder (Gluten-Free)

    The slogan appears to be true: California has the happiest cows, so says a recent article about our state’s dairy farms. A well-seasoned farmer will tell you: the happier the cow, the better the milk. Chefs and farmers alike attest that milk is great for braising meat.  In this recipe, milk is used to add tremendous flavor to pork shoulder. This recipe yields a great base that can be dressed up with a number of different sides and the leftovers make incredible sandwiches.

    Ingredients:
    3 pounds pork shoulder, trimmed
    1 quart whole milk
    1 large yellow onion, roughly chopped
    2 tablespoons vegetable oil
    6 sage leaves
    6 sprigs fresh thyme
    2 teaspoons each salt and pepper

    Directions:
    Season pork with salt and pepper. Heat vegetable oil in a large stockpot or Dutch oven. Add pork, turning to brown on all sides, about 15 minutes. Drain excess oil, leaving about 2 tablespoons in the pot.

    Reduce heat to medium and add milk, onions, herbs and simmer. Cook pork uncovered for 2 hours, turning once after the first hour. Remove and cut into large chunks. Serve with your favorite sides.

    1 tablespoon gluten-free soy sauce ( I use Bragg liquid aminos)
    3 tablespoons gluten-free catsup
    2 tablespoons maple syrup

    Red beans and rice is like the Old Faithful of southern cooking. Ever reliable and regularly featured on dinner tables across the south.
    Originally a creole, not a cajun dish, red beans and rice was traditionally made on Mondays as a way to use up the bones and leftovers from Sunday dinner, which often featured ham. Red beans and rice has stood the test of time, and has situated itself at the very heart of southern cooking.
    This recipe throws a little flavor and color curve, using red bells in place of the more commonly used green. I like the sweetness of red bells, and their sharp color also makes a nice addition.

    Celiac.com 05/07/2013 - Pork chops are one of my reliable standbys, one of my go-to dishes when I need to make a delicious dinner in a pinch. Any way you care to make them, I'm usually happy to eat a pork chop.
    Recently, I decided I needed a bit more splash in my recipe mix, so I looked around that put a new spin on an old favorite. The result made me smile.
    It's spring, so apricots and peaches will soon be appearing at a stores near you. Yes, this recipe can be made with peaches, just use less peach than you would apricot, but otherwise, prepare the same way.
