    Grilled Asparagus (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    This is my absolute favorite way to prepare asparagus, and one that is sure to put a smile on the faces of your family or guests. The process is simple, and the result is totally delicious. Simply coat asparagus in olive oil, lemon juice, garlic, and salt and toss them, on a hot grill for a few minutes, and, violá, a side dish fit for a king!

    1 pound fresh asparagus spears, trimmed
    1 tablespoon olive oil
    1 clove garlic, minced
    1 teaspoon coarse kosher salt
    juice from 1/2 lemon

    Directions:
    Preheat grill to high heat.

    Wash and trim asparagus spears.

    Lightly coat asparagus spears with olive oil, lemon juice, garlic and salt. I do this in a compostable plastic bag that I can then discard, but a bowl or plate works okay, too.

    Place asparagus spears crossways on the grill, and cook on high heat for 2 to 3 minutes, or until tender.

    This recipe comes to us from Elysse Paige.
    1 cup sour cream ½ teaspoon celery salt
    1 cup mayonnaise or Miracle Whip (dip is sweeter with Miracle Whip)
    ½ teaspoon dill weed ¼ teaspoon onion salt
    ¼ cup chopped green onions 8 oz. can water chestnuts, drained and finely chopped
    3 cups or (1 package 10 oz. box package) frozen chopped spinach, thawed and drained
    3 tablespoons red bell pepper --optional
    In medium bowl, combine sour cream, mayonnaise and seasonings. Stir in onions, spinach, water chestnuts and red pepper. Cover, refrigerate
    several hours to allow flavors to blend. Serve with veggies, crackers, etc. Makes 3 ½ cups.

    Mix together:
    1 cup plain Yogurt
    2 tablespoons cinnamon
    1/3 cup Agave Nectar
    1 cup walnuts
    Cube 2 each of  Pink Lady and Granny Smith Apples
    Mix together with yogurt topping.

    Gluten-Free and Vegan
    Ingredients:
    2 ripe avocados, peeled, pitted and diced 2 tsp. olive oil 2 cups fresh cherries, pitted and halved Juice of 1lemon 1/4 tsp. fresh lemon zest 1/4 tsp. sea salt 1/4 tsp. freshly ground black pepper 1/4 cup finely chopped fresh cilantro, plus more for garnish Instructions:
    Preheat grill to medium heat. In a medium bowl, gently toss cherries in olive oil. Place cherries into a large piece of tin foil and fold to seal foil at the top. Transfer cherries in foil to the heated grill; cook for 10-12 minutes or until tender. Meanwhile, in a medium bowl, mash avocados until it forms a chunky consistency.     Celiac.com 08/12/2014 - Here’s another easy summertime drink that will turn a few heads. It blends watermelon with sweetened lime juice and crushed ice to deliver a refreshing burst of summer!
    Ingredients:
    8-10 cups seedless watermelon chunks (about 2 pounds) 2-3 tablespoons Rose’s Lime Juice, to taste 3 tablespoons fresh lime juice 2 cups crushed ice lime slices for garnish vodka, rum, or tequila, as desired (select gluten-free varieties if you have concerns) Directions:
    Combine all ingredients in a blender and puree until smooth (add a few tablespoons of water, if necessary).
    Add lime juice to get desired sweetness.
    Transfer to a pitcher filled with ice and serve in tall glasses.
    Garnish with lime slices.
