After many years of unexplained medical issues, I was finally diagnosed with celiac disease in 2002.  The first couple of years were a rough road traveled, but I am feeling better than I ever have.  It is important that I share what I have learned over the years with others and to do my part to help raise awareness of celiac disease.

All of San-J gluten free products are certified gluten free by the Gluten Free Certification Organization.  We fully understand the sensitive nature that exists for those who suffer from gluten intolerance or celiac disease. Not only do we test each batch of our gluten-free products for the presence of gluten, but samples are periodically sent to an outside laboratory as means of confirming the reliability of our tests. Although the FDA has not finalized a definition or threshold for the term “gluten free,” it has proposed a standard for the presence of gluten as less than 20 ppm.  San-J tests all gluten-free products at less than 5 ppm.  (Currently, there are no reliable tests for less than 1 ppm of gluten.)
