    Kale and Swiss Chard Stir Fry (Gluten-Free) -

    There is a variation on this tasty recipe using Rainbow Swiss chard and pine nuts on my Web site.

    Kale and Swiss Chard Stir Fry (Gluten-Free)Ingredients:
    • 2 cups TruRoots gluten-free penne pasta
    • 1 Tbsp. Barlean's coconut oil
    • 1 large bundle Swiss chard
    • 1 large bundle kale
    • 1/3 cup walnuts, finely chopped
    • 2 tsp. fresh lemon juice
    • 1 tsp. fresh lemon zest
    • 5 chives, finely chopped
    • 1/4 tsp. sea salt
    • 1/4 tsp. freshly ground white pepper
    Instructions:
    1. Cook pasta according to package directions.
    2. Meanwhile, wash Swiss chard and kale; cut into 1 inch pieces.
    3. Heat coconut oil in a large skillet over medium heat. Add Swiss chard; cook, tossing until tender, about 3 minutes.
    4. Remove from heat; drain off excess liquid. Add walnuts, lemon juice, lemon zest, chives, sea salt and pepper.
    5. Drain pasta; gently toss with kale mixture. Transfer to a serving bowl.
    6. Serve warm.

    Gluten-Free and Vegan
    Serves 4
    Ingredients:
    4 bulbs fresh fennel 1/4 tsp. sea salt 1 clove garlic, minced 1/3 cup freshly squeezed orange juice 1/2 tsp. apple cider vinegar 1/4 tsp. orange zest
    1/3 cup sunflower seeds, finely ground Directions:
    Pre-heat oven to 350 degrees F. Slice fennel bulb lengthwise to create disk-like slices. Prepare a baking sheet with parchment paper.  Sprinkle with sea salt and minced garlic, then drizzle with fresh  juice and vinegar.  Top with orange zest and ground sunflower seeds.
    Bake for 30 minutes or until crispy.

    This recipe delivers tasty, refreshing lemon-watermelon coolers that also happen to make good mixers for grown-up drinks.
    Ingredients:
    4 cups seedless watermelon chunks (about 1 pound) 1½ cups lemonade 8-10 fresh mint sprigs Directions:
    In a blender, puree the watermelon and lemonade, and strain into a pitcher.
    Muddle the mint in a glass, add ice, and top with cooler.
    For a tasty, refreshing grown-up cooler: Add vodka, clear rum, or silver tequila as desired.

    Celiac.com 08/28/2014 - My wife loves cucumbers, and I love watermelon. So, this easy recipe was a natural to compliment our Summertime grilling.
    Ingredients:
    1 tablespoon olive oil 8-10 cups cut-up seedless watermelon (about 2 pounds) 3-4 Persian cucumbers, halved lengthwise and sliced (skin on) ¼ cup chopped fresh mint 2 tablespoons fresh lime juice ½ teaspoon kosher salt ¼ teaspoon fresh ground pepper, as desired Directions:
    In a medium bowl, toss the watermelon, cucumber, mint, lime juice, oil, salt, and pepper.
    Serve immediately.
