    Super Southwestern Bean Dip (Gluten-Free)

    Celiac.com 01/06/2015 - This recipe makes a tasty, festive multi-layer bean dip that will have your guests smiling and asking for more. The recipe is pretty flexible, so feel free to adjust ingredients to suit your tastes and desires.

    • 2½ cans refried beans
    • 3 medium ripe avocados, peeled
    • ½ cup of tomato salsa of choice
    • 2 tablespoons lemon juice
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 1 cup (8 ounces) gluten-free sour cream
    • 2 tablespoons mayonnaise
    • 2 tablespoons gluten-free taco seasoning (see recipe below)
    • 1½ cups (6 ounces) shredded cheddar cheese
    • 1 cup sliced black olives, drained
    • 4 green onions, thinly sliced
    • 1 large tomato, chopped w/ seeds removed
    • Tortilla chips

    Directions:
    Mix salsa into bean dip and spread over a large serving plate.

    Combine the sour cream, mayonnaise and taco seasoning; spread over the bean layer.

    In a small bowl, mash avocados with lemon juice, salt and pepper; spread over sour cream layer.

    Sprinkle with cheese, and top with olives, onions and tomato.

    Serve with tortilla chips.

    Gluten-Free Taco Seasoning

    Ingredients:

    • 2 tablespoons ground chili powder
    • 3 teaspoons ground cumin
    • 2 teaspoons salt
    • 2 teaspoons ground black pepper
    • 1 teaspoon ground paprika
    • ½ teaspoon dried oregano
    • ½ teaspoon garlic powder
    • ½ teaspoon onion powder
    • ½ teaspoon dried red pepper flakes

    Directions:
    Mix ingredients in a bowl and place in a jar to use as needed.

    I guess I'm what you'd call a coleslaw purist. I never liked it much as a kid, and once I started to like it as an adult, I developed a taste for the most basic coleslaws. I don't want any jalepeños, or other snappy flavors, like whacky, sun-dried tomato aioli in my coleslaw.

    Gorgonzola is a veined Italian blue cheese, made from unskimmed cow's and/or goat's milk.
    Contrary to popular belief, Gorgonzola, or blue cheese does NOT contain gluten. These days, blue cheese is no longer made with mold from stale bread as a starter, as it was once upon a time. The molds used to make commercial Gorgonzola and blue cheese are isolated for purity, and cultured in sterile conditions. They are gluten-free. That means that most people with celiac disease and gluten intolerance are free to eat most all blue cheeses.
    To celebrate that fact, I recently prepared a delicious beet salad with Gorgonzola, pear and arugula, which is one of my summer favorites. I just couldn't wait for summer to get started.

    There is a variation on this tasty recipe using Rainbow Swiss chard and pine nuts on my Web site.

    Ingredients: 2 cups TruRoots gluten-free penne pasta 1 Tbsp. Barlean's coconut oil 1 large bundle Swiss chard 1 large bundle kale 1/3 cup walnuts, finely chopped 2 tsp. fresh lemon juice 1 tsp. fresh lemon zest 5 chives, finely chopped 1/4 tsp. sea salt 1/4 tsp. freshly ground white pepper Instructions: Cook pasta according to package directions. Meanwhile, wash Swiss chard and kale; cut into 1 inch pieces. Heat coconut oil in a large skillet over medium heat. Add Swiss chard; cook, tossing until tender, about 3 minutes. Remove from heat; drain off excess liquid. Add walnuts, lemon juice, lemon zest, chives, sea salt and pepper. Drain pasta; gently toss with kale mixture...

    This recipe delivers tasty, refreshing lemon-watermelon coolers that also happen to make good mixers for grown-up drinks.
    Ingredients:
    4 cups seedless watermelon chunks (about 1 pound) 1½ cups lemonade 8-10 fresh mint sprigs Directions:
    In a blender, puree the watermelon and lemonade, and strain into a pitcher.
    Muddle the mint in a glass, add ice, and top with cooler.
    For a tasty, refreshing grown-up cooler: Add vodka, clear rum, or silver tequila as desired.
