    Zesty Shrimp with Tasty Cilantro Rice (Gluten-Free)

    Celiac.com 03/03/2016 - Here's a tasty gluten-free dish that's sure to be a big hit with folks who love shrimp and rice. This recipe brings together shrimp, fresh orange zest and juice, scallions, garlic, cilantro and rice to deliver a zesty dish that makes a great diversion from standard dinner fare.

    • 1 pound shrimp
    • 1 cup long grain rice
    • 1 medium orange
    • 1 cup fresh cilantro leaves
    • 4 scallions
    • 2 clove garlic
    • 1 avocado
    • 2 tablespoon olive oil
    • ¼ teaspoon crushed red pepper flake
    • ½ teaspoon ground cumin
    • kosher salt
    • ground black pepper

    Directions:
    Cook the rice according to package directions. Meanwhile, finely grate 2 teaspoon zest from the orange and set aside.

    Cut away the peel and white pith from the orange and, working over a large bowl, cut into segments. Roughly chop the segments and place into the bowl.

    Squeeze the juice into the bowl, then mix in the cilantro, scallions, garlic, 1 tablespoon oil, red pepper flakes, and ¼ teaspoon salt.

    Heat the remaining tablespoon oil in a large skillet over medium-high heat. Season the shrimp with the reserved zest, the cumin, and ¼ teaspoon each salt and pepper. Cook, tossing occasionally, until opaque throughout, 3 to 4 minutes.

    Fold the rice and avocado into the seasoning mixture and serve with the shrimp.

    Ingredients for 1 cup:
    1 ripe red tomato/ 2 Roma tomatoes
    1-3 green Serrano chilies
    3 sprigs fresh cilantro
    1 tablespoon raw white onion
    1 - 2 tablespoons olive oil

    1 ½ cups diced peeled pineapple
    1 cup diced peeled jicama
    ½ cup diced red onion
    ¼ cup chopped fresh cilantro
    ¼ cup fresh lime juice
    1 to 2 Serrano chilis, seeded, chopped
    ¼ cup olive oil
    2 teaspoons chili powder
    3 small zucchini, each cut lengthwise into 5 slices (about 10 ounces)
    1 pound halibut or orange roughy fillets
    4 5- to 6-inch corn tortillas
    Directions:
    Prepare barbecue (medium-high heat). Mix first 6 ingredients in medium bowl. Season salsa with salt and pepper.

    Okay, so pretty much all guacamole is naturally gluten free. Still, guacamole is one of the summertime treats that fuel California, and many other lucky places. High in protein, vitamins, and beneficial oils, and blessed with a wonderful rich flavor, avocados are one of earth's true superfoods. This guacamole will keep folks coming back for more.
    Ingredients:
    3-4 ripe avocados
    1 lemon or 2 limes
    ¼ cup cilantro, chopped
    ¼ cup sweet onion, chopped (optional)
    When it comes to guacamole ingredients, less is more. I generally only use avocado and lime or lemon in my guacamole.

    Before outdoor grilling becomes a casualty of summer's end, I thought I'd offer up one more great gluten-free grilling recipe, with two delicious sauces.
    Grilled fish is one of my favorite treats. I like to make it in the summer, as it's easy to prepare. For this recipe, I prefer swordfish, although halibut, cod, sea bass, trout,
    Mahi-mahi, red snapper, or any other favorite will do. Basically, this recipe will work with any white fish that will hold up to grilling.
    To make this recipe, first prepare the avocado salsa verde. Next, prepare the beurre blanc. Lastly, grill your favorite white fish. When fish is done, top sauce or salsa of choice, and serve with rice and your favorite steamed vegetables.
