    Jane's Tuna/Noodle Casserole (Gluten-Free)

Reviewed and edited by a celiac disease expert.

This recipe comes to us from Jan Ryan.

    Celiac.com Sponsor (A12):
    2-10 oz. package gluten-free elbows
1-10 oz. package frozen, chopped spinach, cooked

Double the gluten-free cream of mushroom soup (above). Use canned mushrooms. Add milk to fill evaporated milk can to top. (Is this confusing? You dont need the whole can of evaporated. Milk, just ½ C. So add 2% milk to remaining evaporated milk in can to refill can)

One 12 oz. can solid white tune (gluten-free)
    Salt & pepper to taste

Cook noodles and drain. Mix all together. Fill 2 regular casserole dishes. Crumble Barbaras Crisp Rice Cereal over top. Bake at 350 degrees. for 1 hour uncovered.

    Scott Adams

Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014. Celiac.com does not sell any products, and is 100% advertiser supported.

Celiac.com 10/03/2012 - As the summer gives way, and the last summer nights begin to carry the chill of fall, the oven beckons you to give up the grill and bring your cooking inside. When that happens, I like to answer that call with simple, quick and delicious recipes that will warm the house just enough to keep it comfortable. Baked chicken breasts offer one of the simplest ways to craft a quick, delicious dinner that will have family and friends smiling.
This recipe will serve six adults, so adjust accordingly.
    Ingredients:
6 skinless, boneless chicken breast halves
    ½ cup honey
    ½ cup Dijon or stone-ground mustard - gluten-free (I use Annie's)
    1 teaspoon dried thyme
    1 teaspoon dried basil
    1 teaspoon paprika
    1 teaspoon dried parsley

Celiac.com 08/01/2013 - Got a seafood lover in your life? Want a guaranteed smash hit for your next romantic dinner?
Scallops are one of those dishes that will delight most seafood lovers, and win you extra romantic points at the same time. They are also one of those dishes that usually carry a hefty price tag when you dine out. That's one of the reasons I like to make them at home.
With a little planning and prep, you can use high dollar ingredients like scallops to deliver a delicious, romantic dinner for probably less than the cost of a single entree at your favorite restaurant.
These grilled scallops are a snap to make. They dazzle they eye and delight the palate. Give them a try next time you need to dazzle your dinner guests.
    Ingredients:
    Bacon, preferably high quality...
