    Potato Non Gratin (Gluten-Free)

    2 large Idaho potatoes, peeled and sliced 1/8-inch thick
    2 large sweet potatoes, peeled and sliced 1/8-inch thick
    1 ½ cup coconut or Darifree milk
    2 tablespoon arrowroot
    1 tablespoon salt
    1 tablespoon roast garlic puree (blend minced garlic with the milk)
    ¼ teaspoon white or black pepper
    1 pinch nutmeg
    1 tablespoon chopped rosemary
    2 tablespoon Gluten-free Casein-free margarine chopped & chilled

    Preheat oven to 400 degrees. Season potatoes with salt and pepper and layer in oiled 2 inch deep baking pan. Bring the rest of the ingredients just to a boil and pour over the potatoes while hot, until potatoes are almost covered. Dot with margarine. Bake at 400 degrees until tender, about one hour. To assemble the dish, slice the meatloaf into 1½ inch thick slices, and plate with a nice square of the potato non gratin, and the beans along side. Serve everything warm.

    1 large onion peeled and sliced
    2 cups of Sylvan Border General Purpose Flour or other gluten-free flour recipe
    Milk (or substitute) added to make a thin batter. Pour slowly until you reach a consistency that is not too thin nor too thick
    Salt and Pepper to taste
    1 egg
    1 teaspoon of gluten-free Baking Powder
    Get gluten-free oil hot in skillet pan and add onion/coated mixture to pan. Fry until golden brown.

    There is little difference between the regular ones and gluten-free. You can add your own seasonings and make some real gourmet onion rings. This is what can be fun about this diet.

    1 box red quinoa
    3 tablespoons good olive oil
    1 yellow pepper
    1 large onion
    3 cloves garlic, smashed through garlic press
    8 ounce package mushrooms, washed and sliced
    1 bunch broccoli rabe, washed and chopped
    Directions:
    Start by preparing 1 box of Red quinoa according to package instructions. While the quinoa is cooking, heat up 2 tablespoons of the oil in a sauté pan, and sauté the onion and pepper together. Once the onion is translucent, add the broccoli rabe and the garlic, and sauté for just a minute or two.     Ingredients:
    8 oz. of Velveeta (add more if you want it really cheesy)
    ¾ of a bag of gluten free elbow macaroni
    3 tablespoons butter
    ¼ cup milk (more if you want it really creamy)
    Directions:
    Make elbow mac and drain. Add other ingredients and mix until melted.

    Simply put, this dish is yummy! It’s also an easy way of breaking the ice with okra for anyone who’s yet to try. I love this recipe because it’s such a great base. It’s delicious over rice or with sausage, shrimp, or pork chops. Okra has great texture, absolutely perfect with the soft tomatoes and peppers.
    Ingredients:
    3 cups okra, chopped into ½-inch pieces
    2 cups tomatoes, peeled and chopped
    1 red bell pepper, chopped
    4 slices bacon, chopped
    1 yellow onion, diced
    3 cloves garlic, chopped
    A pinch of red pepper flakes
    Salt and pepper, about a teaspoon each
    Directions:
    Add bacon to a large, heated skillet and cook until crisp. Transfer to a towel and add onions to skillet. Sauté until translucent. Add garlic and cook for another minute longer.
