    Banana Bread (Gluten-Free)

    This recipe comes to us from Ellen Gold.

    1 cup brown rice flour
    1 cup white rice flour
    ¼ cup each potato starch flour & tapioca flour
    1 tsp. xanthan gum
    1 tablespoon gluten-free baking powder
    ½ tsp. salt
    tablespoon egg replacer (dry ingredients mixed)
    ½ cup butter, (or canola oil)
    2/3 cups honey or brown sugar -or- ½ cup fructose
    cream oil & sugar
    1-½ cups thoroughly mashed overripe bananas

    Mix bananas with oil/sugar. Oil one standard or two small loaf pans, (or six mini-loafs). Dump dry ingredients into wet ingredients, and stir until all is moist. Immediately put the batter in the pans and bake at 350F (however that translates in centigrade) for 40 minutes to an hour depending on loaf size. Cool on rack.

    3 cups gluten-free flour mix(see below)
    ¼ cup sugar

    Combine flour, sugar, xanthan gum, milk powder, and salt in bowl of heavy duty mixer. Use strongest beaters. Dissolve the 2 teaspoons of sugar in the ½ cup of lukewarm water and mix in the yeast Set aside while you combine the shortening and 1 ¼ cups water in saucepan and heat until shortening melts. Turn mixer on low. Blend dry ingredients and slowly add shortening and water mixture and the vinegar. Blend, then add eggs. This mixture should feel slightly warm.

    ½ cup amaranth flour
    ½ cup tapioca flour
    2 teaspoon arrowroot powder
    2 teaspoon light, cold-pressed oil
    ½ cup water
    1/3-2/3 cup extra flour for kneading
    Sift the flours with the arrowroot powder. In a separate bowl, mix the oil and water, then add to the flour mixture. Work the dough with a fork and then your hands. Knead briefly and roll into a ball. Divide the ball into 8 parts. Roll each part into a ball and pat flat. Sprinkle each bread with flour and roll between 2 sheets of waxed paper with a rolling pin. Turn frequently while rolling, and lift the waxed paper occasionally to add flour so the dough does not stick. The bread should be rounded and about 1/8 inch thick.
    Preheat the oven to 400 degrees. Lightly oil a frying pan and heat to me...

    2 eggs
    1cup gluten-free sour cream
    1 can gluten-free creamed corn
    2/3 cup oil
    1 ½ cornmeal
    3 teaspoons baking powder
    1 tablespoon salt (or less)
    1 cup cheese
    Directions:
    Bake in preheated oven at 400F for 35 minutes in 9” x 12” pan or a hot iron skillet.

    This recipe comes to us from Susan Carmack. Dry Ingredients:
    2 ½ cups rice flour
    ½ cup tapioca flour
    2 ½ teaspoons guar gum
    1 tablespoon yeast
    1 teaspoon salt
    Liquid Ingredients:
    2 tablespoons honey
    2 tablespoons olive oil or tallow
    1 ½ - 2 cups water
    1 teaspoon cider or rice vinegar
    Directions:
    Add liquid ingredients to dry ingredients in food processor. Process the mixture until it is smooth like a cake. Spoon it into a greased bread pan or muffin tins. Bake in oven at 350F - 30 min for bread and 15 minutes for the buns.
