    Rolled Sugar Cookies (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    1-½ cups white rice flour
    ½ cup butter or margarine (cold)
    ½ teaspoon cream of tartar
    ½ cup sugar
    ½ teaspoon baking soda
    1 egg (cold)
    1-½ teaspoon xanthan gum
    ½ teaspoon gluten-free vanilla, lemon, or almond flavoring
    1/8 teaspoon salt

    Combine the rice flour, cream of tartar, baking soda, xanthan gum and salt. Mix well. Cut in the butter or margarine until the mixture is in crumbs the size of peas.

    In a small bowl beat the sugar, egg, and vanilla (or other flavoring) together. Add this mixture to the dry ingredients and mix until the dough pulls away from the sides. Form the dough into a flat ball shape and refrigerate for one hour.

    Dust some freezer paper (not wax paper) with gluten-free flour or confectioners sugar. Put the dough on the freezer paper and sprinkle with flour or confectioners sugar. Roll the dough to ¼ inch thick and cut out shapes as desired.

    Bake at 350 degrees F for 12 minutes. Cool on a wire rack. Makes about 20 cookies.

    1 cup butter (two sticks)

    Fig Spread Ingredients:
    1 pack of cut up dried figs
    1 cup water
    Fig Spread Directions:
    Soak overnight and/or simmer until soft and process until smooth.
    Cookie Dough Ingredients:
    1 cup of tallow or butter
    1/3 cup honey
    1 teaspoon vanilla
    ½ teaspoon baking soda
    1 ½ cups rice flour
    2 teaspoons guar gum
    ½ teaspoon salt
    freshly ground nutmeg (optional)
    Cookie Dough Directions:
    Preheat oven to 350F and combine cookie dough ingredients in food processor until they form a ball, then roll out half of the dough (or press) into a pie pan or cake pan for the bottom layer.     ½ cup brown sugar
    ½ cup butter
    1 teaspoon vanilla
    1 egg
    1 cup white rice flour
    ¼ cup almond flour

    1 teaspoon guar gum
    1 cup chocolate chips
    Mix the ingredients in a food processor or mixing bowl. Add chocolate chips. Make little cookies. Bake at 350F for 6 minutes.

    ½ cup teff flour (dark or ivory)
    ½ cup sorghum flour
    ½ cup tapioca flour
    ½ cup cornstarch
    ½ cup almond or pecan meal
    ½ teaspoon xanthan gum
    1 ½ teaspoons salt
    1 ½ tablespoons baking powder
    1 teaspoon cinnamon
    ¾ cup (1½ sticks) butter or margarine
    ¼ cup honey
    1 cup brown sugar
    1 tsp. vanilla
    1-2 tablespoons water if needed
    Directions:
    Preheat oven to 325F. Grease two 12" x 15 1/2" baking sheets. In a medium bowl, whisk together the teff, sorghum, tapioca and cornstarch flours, almond meal, xanthan gum, salt, baking powder, and cinnamon.
