    Almost Cheeseburger (Gluten-Free)

Reviewed and edited by a celiac disease expert.

Use as a dip with crackers, as a cheeseburger with gluten-free bread fingers as dippers, or as a main meal by serving it over boiled, gluten-free elbow macaroni.

This one is from the just-released WFGF Cookbook for Kids and Working Adults:

    Ingredients:
    ½ lb. lean ground beef
1 teaspoon dried minced onion flakes
1 lb. gluten-free processed cheese, cut into cubes
    ¼ cup milk
    1 Tablespoon gluten-free ketchup
    2 Tablespoons gluten-free mustard

    Celiac.com Sponsor (A12):
    Directions:
Have an adult help you brown the beef and onion flakes in a skillet that has been sprayed with a gluten-free nonstick spray, breaking up the meat with a fork as it cooks. Stir in the cheese, milk, ketchup and mustard; stir until the cheese has melted.

Note: Use as a dip with crackers, as a cheeseburger with gluten-free bread fingers as dippers, or as a main meal by serving it over boiled, gluten-free elbow macaroni.

I can’t say enough about the wonder of no-cook meals. When the weather heats up and you want to spend as little time as possible in a hot kitchen, easy to make salads like these are perfect. This particular salad is so delicious, refreshing and juicy, that you’ll happily welcome a few drips running down the side of your mouth. Tossing in some arugula or baby greens is a nice compliment, but the fruit stands beautifully on its own.
    Ingredients:
    4 cups watermelon, 1 or 2-inch chunks
    2 mangos, chopped
    2 avocado, chopped
    1 cup cherry tomatoes, halved
    1 red onion, thinly sliced
    ¼ cup mint
    ¼ cup olive oil
    2 tablespoons white wine vinegar
    1 lime, juice and zest
    Salt and pepper to taste
    Directions:
In a small bowl, combine vinegar with lime juice and zest....

Fall mean apples and apples mean joy. Fresh homemade applesauce is one of my favorite ways to partake in that joy. This recipe is easy to make, and delicious. I put this applesauce on ice-cream, pancakes, waffles, peanut butter sandwiches, and many other things. I prefer to warm it up just a bit, but this easy homemade applesauce is either warm or chilled.
    Ingredients:
5 Golden Delicious apples, peeled, cored, and quartered
5 Gravenstein or Fuji apples, peeled, cored, and quartered
    1¼ cups unfiltered apple juice
    2-3 tablespoons brandy or cognac
    3 tablespoons butter
    4 tablespoons sugar
    Scant 1 teaspoon ground cinnamon
    Splash of lemon juice
    Dash of salt to taste
    Directions:
    Preheat oven to 350 F.
Cook until apples are soft when poked with a fork. ...
