Gluten free is great, but I must warn some people about tapioca. I am allergic to latex and had an allergic reaction to bread made with tapioca. The plant tapioca is produced from have some of same properties of latex. People with allergies are more prone to allergies to latex. Ask your allergist about latex allergies.
