
I am a physician with a nutrition science degree as my premed. I have a casein allergy, and gluten sensitivity. I have auto-immune thyroid disease, but didn't know the celiac link until the last couple of years, and in '04 I developed a peripheral neuropathy. My family has a strong history of thyroid and 8 with neuropathy. I am the only one to reverse a neuropathy. It returns if I eat gluten. I am hoping to help evolve the link for thyroid, ataxia, and neuropathy with non-celiac gluten sensitivity. Creating demand for more gluten free products will ease lifestyle for all celiac disease patients.
