
As a child I was always suffering from stomach pain. As a teen, working at KFC, I was always ill and appeared anorexic. At age 24, I had my gallbladder removed. In 2001 I had my first seizure. In 2004, after the birth of my 5th child, my 9 year old daughter was diagnosed with celiac disease; all my children have the gene or the disease. In 2008, I earned my master in education: curriculum and instruction. My action research project focused on strictly on celiac disease in the school environment. My goal is to raise awareness in schools of gluten's impact on student learning and health--beyond the cafeteria.
