I have multiple food allergies, including corn, wheat, soy, egg, peanut, coconut, beans, sorghum, and casein. Gluten-free is less than half the battle for me--take a look at any gluten-free baking mix--they contain either corn, soy, bean, or sorghum. I've discovered blanched almond flour for baking and find it absolutely delectable! Although great for maintaining a lower glycemic index, watch out! Baked goods made with blanched almond flour are so delicious, it's hard to stop at just one!
