Just diagnosed with Celiac Disease and I'm trying to stay positive. I've lost 15 lbs. (didn't really need to). I've been gluten-free for about 2 weeks and starting to feel better, I guess. But it's depressing. I don't have time to be Gluten Free. I'm a mom of 2 teenagers and my husband is a big bread and pasta fan. I have a good career but never have time to plan and prepare these meals for myself let alone regular dinners, etc for the family. This adjustment is not going very well right now :(

I'm right there with you. I have been gluten-free for a week and I'm dying here. Over the last year I have dropped over 50 pounds and do not look like myself.

I work close to 60-70 hours a week and 3 kids. I did not realize how it would hit, until 3 times this week, I've had lunch meetings and trying to explain what I can and can't eat has been very hard.

At one meal, I just had steamed rice and water.

I'm still in process of diagnosis, but have dropped 20 lbs last fall and felt lousy, (although I can afford to lose more).

I don't have time for this disease either! If I do have it! I haven't gone gluten free yet because I'm getting the labs done next week, and then if I need an endoscopy, well....

It's comforting to hear that I'm not the only one frustrated. Since I've started gluten-free diet, I have been feeling better and have more of an appetite. I haven't gained much back but at least I'm not still losing. Having a cell phone with a 'data package' is key. When you're not sure if something is gluten-free, you can instantly look it up. I Google EVERYTHING!
I still haven't had time to tackle the 'interesting' recipes and probably never will. So for now, for me, it's fruits, veges, fresh meat and LOTS of Hershey kisses. (you would have thought I hit the lottery when I found out I could eat the kisses....pathetic)

Yes it is hard when you have a family to cook for. But as time goes by you will find that you will be cooking gluten free and all the family eat it and they are none the wiser. Remember meat vegetables and dried herbs do not contain gluten. Sushi with avocado and salmon is a great food to take to work or keep in your handbag if you are out all day. The biggest thing is to always read labels each time you by a product because ingredients can change and if there is something that contains gluten you can find yourself on the loo, or in my case as I am an colostomite re bowel cancer I would have a bag of air then it would be like water, and all this can be within a half hour. All it is for most of us is eating way healthier as gluten products are often the additives or modified starch products all white looking and bleached............so not healthy for anybody in large amounts. AND that is right Google everything.

I have celiac, my husband is supposed to eat whole wheat everything, nothing white. Luckily, my kids are grown, so we all take care of our own meals. Although cooking for just myself... I've kinda lost interest in food. I make something and eat it for 2-3 days, then make something else. And lots of fruit and raw veggies.
