This blog is going to be my documented journey into a gluten free lifestyle; and my way of keeping myself responsible and accountable to myself. I love to cook and create recipes. As I do, I will add them with my blog so anyone who wanders in can use them.
Some time ago (I don't remember exactly when) I started getting a runny nose and a cough while eating ice cream. Some time after that it was yogurt. I thought maybe I was lactose intolerant. But the funny thing was I didn't have those symptoms when I drank milk, or ate cheese of any kind. Somewhere along the way I started getting the runny nose and a headache when I ate certain starches. I didn't notice that is was all breads, crackers, cereal, snacks and other things till my doctor started asking questions. Then he had some labs done.
I got this news Friday, January 20, 2012. I've hardly had time to digest this let alone prepare for it. I have to admit this is the first step I've taken. I will stop eating anything I find with gluten and I'm sure there are other words for it. So, I'm on a quest to find all the information I need to become symptom free, lose weight and feel better.
Here I want to document what I ate, how it was cooked, recipes, when I go to the gym and how I'm feeling about it.
If anyone wants to join me on this journey, feel free. We will get healthy together.
