Best Dr's Visit I've Ever Had

Finally went to the dr and had a good visit. I have officially lost 30 lbs, YEAH! No more anemia, first time in 30 years. Dr told me I didn't need to take iron anymore. When I explained to him I went gluten free he knew about it and he told me if I wanted to take the tests I would need to go back on gluten and I said not no but HECK NO! He laughed at that. My vit b-12 and D was a little low so he told me to double up on those for a while. Everything else was ok, folate, magnesium, etc. He told me he wished more of his patients would do what I was doing. Told me to keep it up and come back in 6 months for another check up.
Now, I have found out that I am super sensitive I guess. I have a problem with about 90% of the gluten free foods out there. I get a reaction from almost everything including the gluten free chex cereals. AArrhhh. My favorite breakfast food. Here the other day my sweetie was eating a gluten sandwich and I was drinking a bottle of water. He reached over a couple of times and took a drink. I didn't think anything of it, DUH, a couple of hours later I was doubled up with pain and bloating, and diareha. I chewed him and myself out. I fixed him a sandwich and I forgot to wash my hands and sure enough a couple hours later sick as a dog. I would love for him to go gluten free but he won't. He tried for 3 days and he had gluten withdrawals so bad and he was in a lot of pain. So he went back to gluten. He understands the problems with eating it but he just can't seem to understand the concept of cc though.
He just dosen't believe it. Thinks i'm making it up. So i'm slowly educating him but sometimes I want to slap him up side the head.
Anyway, that's my update, It can be done, it just takes time and patience.
Everybody have a good weekend.

gluten-free Bread

Hello all. I am newley diagnosed and have been doing fairly ok, until i bought and made Bob's Red Mill homemade bread mix. I followed the instructions to the letter and made it in my bread machine ( which was thouroughy cleaned before use) Since eating it i have been experiencing the dirreah that i get when i am glutened? I know the bread if gluten-free, so i am confused. Also i have used the BRM pizza crust mix and had the same result. Perhaps it could be the yeast? Is there a link with celiacs and yeast i am unaware of???

I just want everyone to know (new to gluten free and been having a hard time coping, so maybe you all know this) but I bought the Betty Crocker Gluten Free Brownies, at first they seemed REALLY thick...but YUM!!!! They taste just like the brownies I have always made. I take comfort in knowing at least when I crave brownies, I will be able to get my fix Have a good day everyone!!

Trying To Understand Cc Danger.

I am trying to figure out CC if we really can never be totally gluten-free. I have read, and I agree with the idea, that no matter how careful we are, we are going to encounter gluten that we can't control or even anticipate. We live in a gluten filled environment and I am certain we inhale tiny amounts or contaminate ourselves by touching surfaces onto which other people have deposited traces of gluten. OK, I constantly read that a mere crumb is enough to set off antibodies against gluten. I have also read that the reaction isn't dose related and the antibody response seems to be all or nothing. That being said, if we really can't achieve total freedom from gluten, how is it that celiacs feel better following a gluten-free diet and many feel awful after being glutened. Aren't we constantly being glutened?

How Paranoid Should I Be?

I've been gluten free for 4 weeks now, but I'm wondering if I'm doing enough to avoid cross contamination in my house. My husband and 2 year old son are not gluten free, so there's pasta, wheat bread, and snacks in the house that contain gluten. My husband and I are careful to wash our hands after handling gluten foods, but is that enough?

Do I need to wash my dishes separate from the other dishes?
Do I need separate dishes from my husband and son?
Do I have to have a separate set of cookware for myself?
When I eat at company's house, am I getting glutened by eating from their cookware that has previously cooked gluten?
Can I kiss my son after he's had a peanut butter and jelly sandwhich?

It feels kind of ridiculous to have my own dishes, I think I'll just throw my hands up in the air if I have to go that far.
We're careful as far as having separate peanut butter and butter spread and jelly and toasters, because I know that's obvious cc.

But really? How far do I have to go? I'm tired of isolating myself from everyone and thing.
I Actually Found A Cake I Like.

I have been honest and maybe somewhat negative, but I believe in being honest. Until tonight every scratch recipe, mix, or bought ready to eat baked good I have tried has fallen way short of my expectations of gluten-free substitutes. I have cooked or bought a lot of stuff that is so grainy and off tasting that I have thrown it out. Until tonight I had to say nothing I had tried was acceptable because I could taste and feel the difference. Well, drum roll please----I baked Bob's Red Mill chocolate cake mix this afternoon. I don't have two round cake pans so I opted for cupcakes. I just ate one, slightly warm and unfrosted, AND I REALLY LIKED IT!!!!! I have a friend who just asked me why I report to the forum that I have tried something and didn't like it, even if someone recommended it and said it was as good as real food. My reason was because I want to keep trying whatever is recommended. I kept hoping I would eventually find I liked something. This is was better than Betty Crocker--I made her yellow cake and threw it out. That was really too bad because I had made a killer frosting. I am going to make the frosting again: confectioner's sugar, cocoa, vanilla and butter and cream cheese. I just lost a pound (a very good thing for me) and I am certain to gain it back with really great cupcakes available. I'll share one with a friend. She is always on a diet but always wants to taste anything gluten-free that I bake. She is maddening because she almost always says, "I could eat this." Well, I am picky and tonight I am happy.

Potluck Supper

Not a cooking question per say, more a vent about cooking!

One of the associations I am in at school is having a Thanksgiving/Christmas potluck in two weeks. Different grades will be responsible for different types of items with a general turkey being cooked by one person. When I found out about the potluck I went to speak with a member of the executive board and the faculty sponsor to discuss accommodations. They are both aware that I have food allergies, but probably not aware of the significance of them. I asked if it would be alright if I helped to cook the turkey and the gravy to make sure I could eat it and asked if everyone would please label their food dishes with ingredients so that it would be safe. The exec and faculty member both told me that this would be too difficult. They said that the turkey would be fine and it was too much to ask people to label their food dishes. Really?! I was blown away. I explained that often times gravy is thickened with wheat and that chicken stock can have wheat in it and they just blew off my concerns. I still want to go to the potluck, and will of course bring a dish that I can eat and share, but am a little offended. Is it really that hard to ask people to label their food dishes for the safety of another person? I wasn’t asking for anyone to make gluten free stuffing or go out of their way to buy ingredients that I could eat, just help me to be aware. The consolation they gave me was that I could ask people if I could eat their dish throughout the night, which I feel would be incredibly disturbing and draw more attention to myself.

Any thoughts? Sorry it’s long; no one else in my family/friends circle has Celiac and understands how hard it is to deal with stuff like this.

Not Just What You Eat But Where

Three times now, since going gluten-free after the diagnosis of DH and celiac, my "plague" or DH has erupted after eating lunch at work. Each time I had a super-yummy completely gluten-free lunch: a gluten-free Applegate Farms turkey dog on Kinnikinnik gluten-free brown bread with gluten-free mustard and some fresh lettuce. Today it was a GlutenFreeda's gluten-free dairy free veggie burrito with canned organic peaches in their own juice. I was worried. What was it??? What had I eaten? I carefully heated things in the office microwave that I cleaned and then washed my hands then my stuff was heated in the packaging I had made for them in my own kitchen.

I had heated food in the microwave before..........and then I realized what it was. My keyboard!!! I usually eat lunch at my desk, often working on the computer. Have done it for years. Of course there are crumbs in the keyboard. I can see them. I tried to clean them out and wipe down the keyboard regularly but here's the thing. Most other lunches I ate with a fork or spoon. The past two lunches were finger food. Gross, I know that, too. I got a new toaster and other things but this is the same old keyboard!!!

Lessons learned: stop eating over the keyboard (it's just not a good idea no matter what I'm eating); get a new keyboard; stop eating with my fingers, even if it's a sandwich!

Kind of funny, but not really. My own sloppiness made me sick. Dumb dumb dumb. On the bright side, these new foods really taste yummy!

Gender Percentages?

After listening to the new mammogram recommedations that I feel takes women's healthcare back several steps, I got to thinking about all the times doctors have seemingly not had a clue (or care much) about my issues in the past. I got to wondering if anyone knows if Celiacs or gluten-intolerance has a gender majority? I know there are both men and women on here and suffer from it, but wondered if it seems to be more one than the other. Anyone know?

Your Opinions. Purposely Glutened Myself

Hi

I have been gluten free for about two months. I cheated once on purpose about two weeks ago with a couple slices of pizza after 10 days of dairy free diet as well. My stomach immediately got bloated pretty bad, not painful just bloated. I had D not any different from before. Next morning and day’s later I was fine when back on gluten-free diet but continued limited diary. I still was bloated each day(whats new, nine months now) and bowel movements are not always solid, but I only go and have to go once a day. I find it impossible to believe I have IBS or anything like that, I can control my movements just fine and really only go once. My concerns, can this just be lactose intolerance all this time?(problems since Jan) Biopsy and blood negative for celiac, chrons, uc, no vitamin defiencies what so ever and thyroid is fine. Cholesterol is 160 combined. I had Hydrogen blood test, no SIBO or any other issues there. I have lost 12lbs through since going gluten-free. I was told I am the healthiest sick person they have seen in a while! One underlying issue though, after two failed lactose tests(they were supposedly lost) they finally did one and it was negative, come to find out, it was only a hereditary marker test. Means nothing! So next week I am going for Absorption lactose test and allergy test for Soy, milk, wheat, rye, and various other things( do not think anything will come from this one, just doing as well)
Sorry to ramble, last night glutened as well. With three pcs of wheat bread and then three tacos(not a good choice lol) and only noticed some gurgling in stomach and I think that was because of taco seasonings. Reading most of everyone’s comments on here after getting glutened even buy CC, I seemed to have eaten WAY more gluten and on purpose and do not get what anyone else is?

Any suggestions, Scared, tired, and just want to be better! oh ya, I take fennel for about two weeks now, no improvements yet, next is PB8 probiotic

Thanksgiving

A friend offered to take me home to New York with him for Thanksgiving, and end of the semester insanity aside, this seemed all right. But I've been reconsidering based not only upon a ridiculous amount of work, but also on the fact that I'm going to be away from my kitchen and the dining halls that I've finally got trained in someone else's home for almost a week.

I want to think it's ridiculous be concerned, and that I'm being paranoid, but I've never trusted my food source completely on someone else before. I'm sensitive enough to CC that it's been a problem before, plus my friend isn't one of the ones who gets how serious avoiding gluten, soy, and dairy actually is for me. And it's his mother who will be controlling the kitchen.

Should I make my apologies, and just make Thanksgiving dinner for me and a couple other on-campus folk? Or am I being ridiculously paranoid and there's a way to manage the 6 days, including Thanksgiving?

Is This A Glutening?

I've been gluten free for about a month, and still don't feel right yet. Therefore, I'm not really sure what is a glutening and what isn't for me yet. Last night I ate a chili at wendy's, plain no cheese or onions, and a plain baked potato, and a coke. This morning, I am absolutely NAUSEOUS. I should explain that before I was diagnosed, I was nauseous all the time and I just assumed it was one of the many meds I was on. However, I haven't been on those meds since diagnosis, and I haven't been nauseous like that in a while. This is the kind of nausea I would have when pregnant, and I actually gag while going about my business, and feel like I need to EAT something or I will throw up. This was the first time I have been out to eat anywhere in a long time now. I just didn't feel like cooking. Another thing is I have gained 2 pounds for no reason. The only other things I ate yesterday were a small bowl of cereal with rice milk, a rice cake with a tablespoon of almond butter and some jam, and a bowl of homemade chicken soup. I dont think that should cause me to gain 2 pounds.

The problem is, I am just not feeling much better at all yet on this diet! I have days where I feel okay, and then days where I am bloated again, and gain weight again for no reason, I have had so many many headaches since starting gluten free that I can't even count them. I've got 4 or 5 small itchy bumps on my arms, they are like little bumps that pop up, itch to death, I scratch them and they scab over and stop itching, I've never had these before. I am also feeling totally depressed now! I dont even want to get out of bed the last several days. My bowels still aren't working right. Is this EVER going to change?? It seems so hopeless!!
