  1. This is an amazing cake in my opinion. Heavy and rich like a cheesecake in a way. Hope you enjoy it. Lemon Chickpea Cake 1 can (19oz) chickpeas, drained and rinsed zest of one lemon finely minced juice of one lemon 4 eggs 1 cup granulated sugar 1/2 tsp baking powder gluten-free icing sugar for garnish (optional) In a food processor, processs chickpeas with lemon rind and 2Tbs lemon juice until very smooth. Add eggs, sugar and baking powder and process until well blended. Pour into a 9" greased springform pan and bake in preheated oven (350F) for about 45 minutes or until cake tester comes out clean. Cool about 15 minutes in pan, slide a knife around to loosen edges then remove sides of pan. Drizzle with remaining lemon juice and sprinkle with icing sugar. This cake is delicious served with fresh berries or a sauce or syrup made of berries.
