  1. I have 'issues' (diagnosed allergies) to evaporated cane juice from cane sugar and soy lecithin from soy. So I won't eat Kind bars.
  2. I can tolerate all kinds of beans and/or bean dishes, as long as they don't contain any of my diagnosed allergens. However, I used 'Beano' to digest beans and other 'gassy' vegies (like brocolli, onions, etc.) before meals, UNTIL Beano started adding an alcohol sugar (mannitol?) to their ingredients. I can't tolerate any alcohol sugars due to leaky gut issues...
  3. I'm thawing and heating (microwaving) leftover homemade clam chowder with homemade buckwheat corn (yeast) bread. Our dinner will match the weather, which was 6-8 inches of snow fall today and a high of 29 F. That's not typical Seattle weather, but I love walking in the snow. Just wish I had some cross country skies, like everyone else around here.
  4. We're having Applegate Farms chicken and apple sausages cooked with saurkraut, apples, apple juice and cinnamon with leftover sweet potatoes (mixture of yellow, orange and purple). We have the sausage and saurkraut dish at least once a week, because my husband has German heritage and I lived in Germany for 2 years and love sausages. (I make enough for 4...
  5. Yes, I loved the taste and texture of my bread, which tasted more like pumpernickel than rye. I was a bit disappointed that the bread didn't rise more, but it did double in size. So I guess it did what it should. Next time I'll try a different recipe from that book (The Allergen-Free Baker's Handbook by Cybele Pascal) and see whether the same thing happens...
  6. I avoid any of Amy's foods which contain my diagnosed allergens. So any Amy's food that are free of my allergens don't bother me at all. I often wonder, when people talk about CC from products, if they really have other undiagnosed allergens, besides gluten intolerance. I've only had one CC incident (from gluten) in 8 years. That occurred at a Mexican restaurant...
  7. No yet. Still waiting for it to finish rising, baking and cooling. LOL I probably wouldn't have had to wait so long if I weren't allergic to most common baking ingredients (dairy, soy, egg, cane sugar, nutmeg and vanilla) as well as gluten intolerance. Fortunately I recently found a great baking book which excludes 5 of my 7 allergens.
  8. Hot from the oven homemade buckwheat/corn/caraway seed bread (mock rye) with Amy's Lentil Vegetable soup for dinner. Fortunately my husband loves soup. (I made clam chowder from scratch last night.) This is my first attempt at homemade gluten-free yeast bread. After all the work to make the bread, I will just open cans of soup. Mine will be the Amy's with...
  9. Sunshine burgers (barbeque flavor), okinawa yams (purple) and brussel sprouts. The last 2 dishes were topped with Earth Balance dairy/soy free buttery spread. Actually the whole thing was a 'leftovers' frozen dinner from a few weeks ago. I'm running out of those leftovers frozen dinners. So I'll need to cook again soon.
  10. I was really tired tonight. So I pulled out the last 2 (frozen) servings of my Thanksgiving leftovers soup. That included a butternut squash soup base to which I added carrots, celery, onions, kale, mushrooms, pumpkin (from a Halloween pumpkin) and leftover bits of Thanksgiving turkey. We had Seattle Brown (Ener-G Foods) crackers with the soup and ate Medjool...
  11. We ate basa/swai (white fish) poached in Imagine chicken broth with sweet onions, steamed brocolli with Earth Balance dairy/soy/egg free mayonnaise, and Alexis rosemary olive oil (frozen) fries with the last piece of Lemon Poppyseed birthday (bundt) cake for dessert (recipe from gluten/dairy/soy/egg free baking book). That was from my husband's birthday just...
  12. The pizza crust recipe was from "the Allergen-Free Baker's Handbook". It used a basic gluten free bread flour mix with: 1-1/2 cup millet flour, 1-1/2 cup sorghum flour, 2 cups tapioca starch and 1 cup potato starch. I was supposed to add only 1 tablespoon of olive oil to the dough and save 2 tablespoons to brush onto the dough after it rose. However, I misread...
  13. My husband loved the thin crust. I stretched the dough intended for a 13x18 pan into those 2 10x15 jelly roll pans. I should have calculated that before I stretched it so thin. LOL Oh well. Next time I use that recipe I'll make smaller pizzas with thicker crust. Nevertheless, I loved the taste of the crust and it was sturdy enough to hold all my toppings...
  14. PIZZA! With homemade crust from recipe I found in an allergy free baking book (gluten, dairy, soy, egg, cane sugar, vanilla, nutmeg, nuts free recipe). I put the (yeast) dough in 2 10x15inch jelly roll pans. After that rises, we'll top each pizza with our favorite toppings. Mine will include tomato paste (Muir Glen), shrimp, sliced zucchini, green pepper...
  15. I successfuly treated my candida infection (diagnosed by stool test) by taking Nystatin for 3 months. (The next 4 stool tests were free of candida.) I don't believe in 'die off', but I did experience the listed side effects of Nystatin for almost all 3 months of the treatment period. Eventually my body adjusted to that drug and I stopped experiencing the...
  16. Ask your doc to run a full panel of thyroid tests, including TSH, free T3, free T4 and TPOab. Many celiacs develop Hashimoto's thyroiditis, esp. if they had long undiagnosed celiac disease. That last test (TPOab) is the test for Hashimoto's antibodies, which can be very high even when the other 3 tests are normal range. Chronic constipation is a common symptom...
  17. Yes, I exercise daily (60-90 minute walks and 20 minutes of weights and yoga). Exercise helps increase endorphins which increases immunity. I actually have a great naturopathic holistic doc who prescribed low dose naltrexone, which increases endorphins and improves immunity, and arabinogalactins (the source of echinechea) to fight respiratory infections....
  18. I never had low WBC before this year. I also rarely got colds, and for those rare colds I could fight off cold symptoms with a good night's sleep before this year. My WBC was lower than normal in September and much lower in November. That's not a good trend. I also had all those Leukopenia symptoms like fatigue, frequent respiratory infections and developing...
  19. Yes, because celiac disease can prevents absorption of Vitamin D and other vitamins/minerals which help immunity, we can develop deficiencies of all those nutrients which help us fight off viral and bacterial infections. I struggled through 4 years of gastrointestinal infections (8) after I was diagnosed with celiac disease, before I started taking HCl supplements...
  20. I took oral Nystatin for 2 months (3x daily) after I was diagnosed with candida by DNA Microbial (Metametrix Lab) stool test. I did NOT follow a restricted candida diet. However, I did abstain from my diagnosed allergens (gluten, dairy, soy, eggs, cane sugar, vanilla and nutmeg). Nevertheless, I could eat any other kind of sweetner (agave, beet sugar, honey...
  21. has not set their status

  22. You might have other allergies/intolerances besides gluten. My husband and I both have diagnosed (by ELISA blood test) allergies to dairy, eggs, vanilla and nutmeg. I'm not saying that you are allergic to all of those foods. However, rather than believing that a gluten free product has gluten or cross-contamination issues, you might consider whether you have...
  23. How were you diagnosed with 'SIBO'? That term is like 'IBS', because many different kinds of critters can cause intestinal dysbiosis (imbalance of intestinal microflora) or SIBO. I've had 5 different bacterial infections, 2 parasites and candida, all diagnosed by stool tests. So I wondered whether your doc used a stool test to diagnosed your SIBO. If so,...
  24. Hi Jason: The following is one of several similar definitions I found for 'biofilm': "A complex structure adhering to surfaces that are regularly in contact with water, consisting of colonies of bacteria and usually other microorganisms such as yeasts, fungi, and protozoa that secrete a mucilaginous protective coating in which they are encased. Biofilms...
  25. Check the ingredients in your creamer. That could contain soy or casein (dairy protein). I would also call the manufacturer if there are some 'mystery' ingredients on the label. SUE
