  1. Hello I have not been on for a long time so I am hoping you all can help me. I have a chance to do a study for a vaccine so I can eat normal again. I was diagnosed with blood and endoscopy. I really didn't have any symptoms. I found out by accident in 09 and have been gluten-free since. Any way....this study is for a vaccine and I would have to eat gluten cookies every other day for 4 days, then get a vaccine. Thats pretty much the gist of it. ......I think. And I get $800.00 for doing it. Can any one please tell me if this is a bad thing to do or safe or unsafe. Thank you so much for reading. Valerie

  3. Having A Celiac Break Down

Hi I just am a night owl. I eat the cool ranch doritos that are gluten-free. And the candy I eat is gluten-free. So the bread really is good? I bought some bread 1 time that weighed 5 pounds and horrible. I will try it. Thanks so much

  5. Having A Celiac Break Down

Thanks every one. Ok why I only eat 1 meal a day??? I am tired of eating the same crap. I want to go make a grilled cheese like normal people. When I said I dont feel any better I meant I dont feel any different. Nothing was wrong with me before. I would get occasional naus. But that is it. No symptoms. I had a endoscopy twice and blood work. I got it. I weigh 107. I want to be back at 115. But im only 5'4. I have a tiny boned family. Finish genes I guess. So here is what I eat per day..... Dinner around 10 or 11 pm..---salmon and rice, or pork chop and can of pintos, or meat patty and can of baked beans. That is my rotation. Then I eat a bowl of chex, doritos, candy bars and or chips with dip. I do take nightly walks late. ok so I am ready for help that I can really live with. Thanks so much every one for understanding.
  6. Having A Celiac Break Down

Hey there. I had a biopsy and blood work done. What I meant was I didnt even know I this till vit. d was low. I dont feel any different is what I meant to say. Never runny poops, never any thing weird except naus. sometimes. Every thing in my house id gluten-free except my sons stuff. What healing diets are talking about? I want to do that. Do they really work? I only eat 1 meal because im tired of eating the same thing over and over.
  7. I am not out for sympathy first of all. I am having a break down. I cant do this any longer. I made a gluten-free strawberry short cake and was crap. I eat 1 meal a day. And dinner is either pork chop, salmon, or hamburger patty. I want real food. AND WHAT I DONT GET IS THE DR SAID I HAD THE WORST CASE HE HAD EVER SEEN 2 YEARS AGO. I DONT FEEL ANY BETTER!!!! What would happen if i just said screw it and ate what i wanted? My husband has no sympathy for me at all. My friends and family dont get it so they just say eat what I want. My mom was finish and always had something wrong with her stomach. She was never diagnosed. Now she has passed away. Please give me ideas someone about what the worst that could happen if I ate normal . I have dreams of eating gluten all the time. Help I cant cope any more.

  10. How To Start Gluten-free Living

Hi I was diagnosed in feb and was at a loss as well. I cant believe how many foods are naturally gluten-free. Here is what I eat... home made french fries boarshead meat rooled up with cheese any veggie any REAL meat from the butcher fruits a lot of candy edys ice cream I have a whole mess of stuff i could send you. I thought I was going to die when I had to do this but it is really easy. You will get used to it. I havent made any thing out of a gluten-free cook book and dont plan on it. If you need any more help please just ask Valerie
  11. My son is 5 and weighs 40 pounds which is right where he should be according to the Dr. There are so many over weight kids out there because there parents let them watch tv and eat all day instead of playing out side so when people see a child at a healthy weight it is weird to them. Her weight is fine.
  12. I eat what ever I want..not gluten though...And I dont gain weight at all. i want to because I only weigh 118 but the dr says that is a healthy weight so that is fine with me.
  13. What Do You Tell Them?

I am sorry I am not going to be able to really help you with this because I do not eat at peoples house. I was just diagnosed in feb so I am still new to this but I am not going to chance it good luck
  14. Can any one tell me which kind of flour is most like normal flour? I am looking to make fried chicken and need a flour to coat it. What kind is best for baking. Does it taste bad or will i know a difference when I use it? Thank you
