Grains are grass seeds, all grass seeds have gluten(wheat, barley, rye, oates, corn, rice, millet, sorghum have gluten which is a mixture of proteins (prolamines). At present i am intolerant of (besides wheat, barley, rye, oates and their product) CORN, rice, potatoes (except new potatoes),sucrose, dairy of any kind, legumes, red meats, nuts and nut oils and most other oils(except coconut oil, grape seed oil, hemp oil and virgin olive oil). These dietary exemptions may seem a bit extreme, but i follow a well planned SCD and have been on it for close to 2 years without any problems. Take heart though for i know that eventually i will be able to tolerate everything i have mentioned i had to eliminate, except -of course- wheat, barley, rye, oates and their products. These i can never eat- i do not miss them, they were slowly killing me.

Look at http://en.wikipedia.org/wiki/Starch and you will see wheat listed. I stay away from anything that lists modified food starch as an ingredient. My motto is: IF I CAN'T MAKE IT; I DON'T EAT IT!
How long had you gone undiagnosed? I had celiac disease for over 10 years and not knowing. Because of my age, being over 50, it took over two years to heal the damaged villi. It can be a slow process for some.

i am a celiac but my sister and one of her friends had been diagnosed with MS over 10 years ago. several monthes ago i came accross an article in August edition of Scientic America which mentioned how rheumatoid arthritis. diabeties 1, celiac disease and MS (all being autoimmune diseases) have "leaky gut" syndrome in common. after several monthes of badgering they were convinced to try a gluten free, legume free, dairy free diet (basically that is the diet i am on because of legume, corn, rice, potatoe, sugar, red meat, poly fats, most oils and nuts intolernces) my sister's symptons stabalized and is condsidered in remission: her friend who, because of ataxia had gone from using a cane to using a walker and getting ready to use a wheelchair now walks without a cane or walker. she has also enjoyed recovery in several other areas. her pace of recovery has been nothing less than a miracle in her own words. she has also signed up as a voluteer for the CCSVI study being conducted by the local university
