      Its' been a long time since I've logged into this site.  When I saw this topic I felt I had to reply.  I've been off of gluten about 5-6 years.  I was doing really great, but occasionally felt something wasn't right.  One morning woke up with hives from head to toe.  I went to the hospiital and they said to see an allergist.  I made an appointment and went to the allergist.  They did the testing and I did not show any signs of allergies.  The sent me back to the waiting room to wait to see the doctor, and while waiting for the doctor, I broke out in hives all over my chin.  The doctor called me to the back and told me that I was allergic to something but told me he couldn't tell me whet.  His exact words were, "Well, we know you are allergic to something, so keep doing what you are doing and you should be ok."  So, again I took things into my own hands and started an elimination diet.  I found out that I was allergic to white potatoes(and all potato flours) and all corn products. 
      I thought I was cured when I found out that I had Celiac (officially undiagnosed by a doctor) then I started with these new allergies.  My point is, try an elimination diet and you might find that you are having issues with other foods as well.  Never in a million years did I ever think I would develop other allergies while being denied gluten.  Unfortunately I was wrong.  However, I have managed to find things that I can eat.  Hang in there it gets much easier as you go.

      Corn/potato Issues?
      I have been gluten free since 2008.  Have had minor setbacks through the years but nothing major.  In December 2012, I woke up one morning with what I thought was sinus infections and went to the Doctor.  I was prescribed antibiotics.  About 1 week later, I woke up one morning with hives.  Again, I was put on antibiotics and was told I had to wait 6 weeks to see an allergist.  Within the six weeks while waiting for the appointment, I was feeling"not quite myself" and went to the hospital.  After insisiting I be tested, it was determined that I had C-diff (bad bacteria take over in the gut).  I had to put off the appointment with the allergist.
      Well, one thing leads to another and I've just been tested for allergies.  (I did an elimination diet and determined the hives were related to white potatoes and stomach issues were related to corn.)  When I went to the allergist office this past week, they did the skin prick test for 72 food allergens.  I did not react to any of them.  However, while I was put in the waiting room to speak with  the doctor to get my results, I broke out in hives on my lower right jaw to the chin.  I was called to the back and put in a room and showed this to the nurse who reported it to the doctor.  He came in to see the hives and told me "we will never know what you are alergic to. Just avoid the foods you think are giving you trouble." 
      The elimination diet has helped me pinpoint the culprits.  I have tried to eliminate as much of these foods as possible.  My question is:  Is there a website I can go to to find out safe vs unsafe ingredients?  I have eliminated potato completely from my already restricted diet ( i have diverticulitis, celiac, now add in potato and corn products and I am very limited).  I do like to cook, so that is not a problem.  However, with somewhat hectic schedules, I'd like to have a go to meal if needed.  ( in the past it has been healthy choice chicken and rice soups).  Any suggestions?

      Just last week I broke out in hives. All over arms, legs and face. I ended up in the hospital ER. I have been fighting with hives for over a week now, and I am not quite sure, but I think it might be related to nightshades. I looked up the topic and found out what nightshaces are. However, I am not quite sure if sweet potatoes are included in this category. I am having a hard time grasping the fact that I will have to give up a lot of the things I have adjusted to when I found out I had Celiac Disease. Now, again, things will change. What type of bread should I buy? What type of sweets will I bake? What type of crackers will I have to get? Everything I have has potato starch as an ingredient. Not to mention giving up all the spices we use here in South Louisiana, like the cayenne pepper, sweet peppers as a seasoning, etc. Can someone please help?

      Gluten And Pancreas?
      Need some help here!

      One of my good friends' daughter has some type of gluten intolerance (self diagnosis). She has been suffering for several months now and determined it was celiac or some form of gluten intolerance with no help from the doctors. The doctors keep testing for everything and cannot give her a positive diagnosis.

      We have been in contact lately, and she is suffering from some other things as well. She called me tonight and informed me she was back in the hospital because of pancreatitis ?sp? She has been hospitalized several times in the last few months due to different symptoms. Can someone tell me if there is a connection between Celiac and the pancreas? (elevated enzymes) Or should she be seeking advice on other problems? We can't figure out the connection and need some help with this.

      I am a self diagnosed (4 years now) celiac and have been trying to help her as much as possible. I would appreciate if someone can give me some insight for her. She is at wits end.......

      I buy many loaves and put them in the freezer, as I am about 2 hours away from the nearest whole foods. But, I take one loaf out at a time and put it in the refrigerator. It will last up to 2 weeks in the fridge.

      This recipe is similar to what we call egg salad sandwiches. Very similar to tuna salad sandwiches, except leave out the tuna fish and spread on bread or crackers or chips.

      4-5 hard boiled eggs, peeled and chopped to your liking
      1-2 large serving spoon of mayonaise
      2-3 tablespoons yellow mustard
      1-2 tablespoons sweet relish
      salt and pepper to taste

      mix together and enjoy

      you might have to adjust the mayonaise and mustard to your liking. I like lots of mustard and not so much mayonaise on mine.

      Boil corn noodles until done. Drain and rinse with water and place in 9 x 13 pan. In large glass bowl, melt 1-1 1/2 lbs velveeta, 1 can evaporated milk, and 1 stick of butter in microwave in 2-3 minute increments, stirring after each session. When completely melted, pour over macaroni. Mix until completely combined, add sliced velveeta cheese on top to cover entire pan of macaroni and bake for about 30-50 minutes until top starts to brown. (don't use American Cheese- I don't think it is gluten free)

      Onion rigns can be easily made by soaking them in an egg and milk batter. When ready to fry, pass them in corn flour or corn meal.

      Instead of going out to buy containers, use empty 2 liter soft drink bottles. They can be cut to the size you need (just take a sharp knife/scissors and cut the bottle across the top to the size you desire). Freeze standing upright, then the next day add about 1/2 to 1 inch of water on top as a sealer. They also stack well once frozen. I use this to freeze almost anything. Once they are frozen they can be tossed around without fear of them breaking open. This method is wonderful for freezing deheaded shrimp. The tails tend to bust through ziploc freezer bags, then you have a watery/icy mess in your freezer. The shrimp tails will never penetrate the 2 liter drink bottles. My family use these to freeze any and all left overs, fresh meats (deer meat, duck breasts, frogs, pork, etc) It's my family's own little secret to reuse/recycle. When you want to retrieve what is in them, place in microwave for a few minutes on defrost and the contents pour out, or the container can be cut off using a sharp knife and lots of care.

      I put the whole loaf in the refrigerator. I usually use it within a two week period. I have never had problems with it going bad in the refrigerator. When I need a slice, I toast it.
