Thinking about how most trader joes salads are not gluten free, but looking at the ingredients on many of them (minus the dressing), they appear to be gluten free. For example, the chicken citrus salad without dressing has:
Grilled Chicken Breast (Boneless, skinless chicken breast with rib meat, water, Canola oil, modified potato starch, salt, sugar, granulated garlic, lemon juice concentrate, black pepper), Napa Cabbage, Green Papaya, Carrots, Daikon Radish, Lime Wedge, Green Onion, Red Cabbage and Cilantro.
Would it be safe to put my own gluten free dressing on that? All those above ingredients look safe except the modified potato starch, though they do not specify it is made with wheat, so I'm assuming thats safe. Thanks all!

I don't drink, but I do want to contribute my bit to the check. I called and asked if they had gluten free options, and they said no.
My question is, because I am gluten sensitive, not celiac, and am usually ok with cross contamination as long as I don't physically ingest it, could I ask for, say, a Spinach Salad with a hard boiled egg, hold the dressing and I'll bring my own? Is that ok?

Ever since my local deli got a new shipment, the texture is different (crumblier/gluten-y?) and my stomach has been hurting, but that might just be my mind playing tricks on me. Has anyone else noticed something similar? Tried contacting Glenny's, but they never got back to me.

So I started my Gluten-Free diet today. I bought a yuba pocket (I love them) at Fairway in NYC. It says its wheat free, but I went item by item through the ingredient list and it seemed to be safe:
Organic Brown Rice
Yuba (Soy Bean
Expelled-Pressed Canola Oil.
Am I safe to eat this?

I posted my story in a thread below. Long story short, I think I might have Celiac. I had my doc run my cholesterol check (being 23, he never ran it before) the results came back WEIRD and I'm scared....
HDL was 81
LDL was 41
VLDL was 11
Total cholesterol 133
Any idea what this could be?

I am a 23 year old male with a history of low body weight (presently 5'10, 125 lbs.) although I eat a lot. I am also extraordinarily active (run 5 miles a day), although I get headaches and stomach upsets sometimes, but I feel well enough that activity remains uninterrupted. I am, and have been eating TONS of gluten. Doctors say I just don't eat enough. FALSE. I eat 3,000 calories a day on average
but my weight has been bugging me recently so I ordered my own labs through PrivateMDLABS. I have an appointment at the Celiac Center in NYC February 15th, but I ordered some labs and would like help interpreting.
The antibody tests were all strongly negative, but the genetic tests look strongly correlated as positive with Celiac:
1) Deamidated Gliadin Antibodies, IGA: 3 (reference range 0-19); Negative is 0-19; Positive is 20-30; Strong positive >30
2) Deamidated Gliadin Antibodies, IgG: 3 (reference range 0-19); Negative is 0-19; Positive is 20-30; Strong Positive >30
3) Ttg-IgA: <2 (Negative 0-3; Weak positive 4-10; positive >10)
4) Ttg-IgG: <2 (Negative 0-5; Weak positive 6-9; positive >9)
5) Endomysial Antibody IgA: NEGATIVE
6) Immunoglobulin A, Qn, Serum: 247 (70-400)
The Genetic tests (this is what scares me):
DQ2: (DQA1 0501/0505, DQBI, 02XX) POSITIVE
DQ8: (DQA1 03XX, DQB1 0302) POSITIVE

I'm a 22 year old male with a history of thyroid cancer. So for the past few years, I've been having fatigue issues, along with gastrointestinal symptoms....I've also had a skin rash that looks to me like herpetiforms, and I have a diagnosed thyroid disorder that is well under control. Recently, I've become aware of Celiac disease, and called my doctor, and he informed that when I had an endoscopy a few months ago, they took a piece of my intestine to biopsy for celiac sprue, which came back negative. I asked him to fax it to me, and sure enough, they did and its negative.
My question is, could the biopsy be wrong? Or could I not have been consuming enough gluten in the days before for it to show?
