  2. Grab yourself a one burner hotplate. it's amazing what you can make with a single pot. An easy one is gluten free pasta( you must learn to not over cook it or it will turn to mush), Canned tomatoes, and fresh chesse(I used parmasen, or romanno) and a pinch of salt and pepper. As a celiac you have to remember When in doubt leave it out. Keep it fresh, keep it simple Just because it's gluten free doesn't mean it's good for you There's some more receipes on this site too If you have any other questions feel free to PM me

  4. Bri, you know how much better you feel eating gluten free, so ask yourself, "do I want to be sick or feel better?" I had no problem going gluten free but it took a little while(6 months) to feel better because I was so ill. I stand 6'5" and my weight had fallen below 130 lbs. best of luck
  5. As yoda once said in one of the Star Wars movies"there is no try there is only do". Depending on the severity of your condition it could take up to 6 months to feel better.
  6. I use peppercorns all the time in my gluten-free cooking. I don't think thats your problem, depending on the restuarant cross contamination is prolly your problem

  8. Hi Kit, I know what you mean but a year ago I was starving. I was close to being hospitalized for malnutrition I was so thin. (6'5" less than 130)My weight is a constant 177lbs I do this by nibbling all the time. My meals are small portions and I make everything from scratch. don't be afraid tho you'll get it figured out
  9. well for a start I'd start eating someting like hummus. If you're in dubai it should be readily available. A year ago I was in the same boat as you. It took six months to get things figured out. The way I recovered was to start eating a mediterranean diet. I amke my own gluten-free crackers and bake my own bread. But mostly I eat italian style, with rice pasta(which you must cook al dente)lots of fresh veggies and fruit meat and olive oil
  10. Dear foodie girl, well I'll tell you the same thing my GI doctor told me when I asked about bloodwork 1 year later. She said to me"you're a celiac and will be one for the rest of your days". and no bloodwork or endoscopies will say anything more. if you need to know what these results say do a google search they will come up Cheers
  11. Your students sound alot like my co-workers. They had absolutely no compassion or understanding of what I was going through. I tried to communicate with them but don't anymore. The only one who knows whats going on is my boss and my foreman.
  12. No fate doesn't have gluten in it. But remember to aways check. My hummus has the following Chickpeas Red pepers Lots of garlic Tahini butter(made from sesame seeds) Lemon juice pinch of sea salt cilantro and cumin The Biggest thing I found is to keep it fresh and simple And when in doubt leave it out

A couple of ideas for you 1st don't tell them what you're cooking. 2nd ask your daughter if she wants to continue being sick? 3rd I learned to bake my own snack foods I suffered from insomnia during my bad time last year and started watching rachel ray"30 minute meals" if you can find your way around a kitchen you can make these meals Bets wishes Mike
  15. no not unless ur doctor says. also there are lots of choices for gluten free pasta and breads.Big thing with gluten-free pasta, you can't over cook it or it turns to mush. don't worry you will survive. We all did! AND REMEMBER YOU ARE NEVER ALONE. Best regards Mike
