  1. When I started getting wonky symptoms I started a journal. Every once in a while I'll go back and read through the details. It's an eye-opener! I highly suggest you do that. Make sure you date your entry. Note your symptoms and other quality of life points. What you've eaten and how you feel. Note any changes that you've made in your habits. Make a checklist of the things you need to follow-up on, i.e. a thorough thyroid workup (regular thyroid tests may not detect an abnormality), celiac/gluten test, etc. You must be your own health advocate as no one else is living in your shoes. Insomnia is an evil and torturous thing. I hope you find an acceptable resolution.
  2. Did you experience the same things in your sleep before you went gluten-free? Are you on any prescription/otc medications? When was the last time you had a full physical? Keep a journal of your food/medication/sleep, etc. Maybe you'll see a pattern that will give you an idea of what's going on.
  3. I apologize for commenting on an old thread. I read a comment somewhere recently that alluded to stress, heavy emotional stress, as the trigger for Celiac. Back in the early 2000's my widowed mother decided it was time to remarry. Kept me completely in the dark. It was a very, very difficult time for me as I was already trying to recuperate from a cross-country move and my father's death. Well, after a visit with my family, I began to see new symptoms. First my hair began falling out. Then, the other symptoms trickled in. I was at the lowest point in my life. So, while I've looked back to believe that I've always had 'mild' gluten issues, this stress-that-broke-the-camel's-back really pushed me over the cliff (was positive for Hashimoto's). I've never been tested for celiac. I've been told my a naturopath/holistic doctor that I'm GI. Long story short, I certainly believe that major stress will exacerbate underlying health issues. For me, the path was evident: intense emotional stress-->Gluten reaction-->Thyroid trouble-->Hashimoto's. Since I have managed my stress and been gluten-free, my symptoms have gone away and my hair has come back. It feels so good to know what was ailing me for so many years!
  4. Posting to an old thread, is that ok? Thank you for this recipe! Before my flare-up recently, I made a fantastic cheese danish using store bought crescent rolls. I'm craving it again! So glad I found this through the search field.
  5. I recently went to the Yeah Burger in Va-Hi. These guys are awesome for providing clearly marked gluten-free options. I asked for Duke mayo and the girl informed me that it's NOT gluten-free! I'm so sad about that. Back to Best Foods/Hellman's. I really felt the love at Yeah Burger.
  6. I needed to make a dessert for a dinner invitation recently. So, it was time to break out the Betty Crocker gluten-free cake mix. It was the yellow cake version. The cake rose just like a regular cake. I had to slice the top part in order to apply the frosting. I chomped on the extra parts uncontrollably. Let me tell you, it was so good. I made a cream cheese frosting with chocolate chips and then layered cherry pie filling on top of it all. Don't know if the cherry filling was gluten-free or not. I didn't experience any symptoms. The rest of the non-gluten-free party enjoyed the dessert and the lady of the house cut a big portion out to keep for herself! It's not as moist as the regular cake mix but not bad either!
  7. We cooked our first Tinkyada spaghetti dinner last night. I used the spinach/rice combo. It was amazingly great! Cooked in 15 min, as packaged suggested. Unlike our experiences with other gluten-free pasta wherein the gummy factor always appears just when it's edible, Tinkyada held up perfectly. Yum, Yum Yum! I'll have to go to their website and post my glowing review. By the way, for any Atlanta residents, you'll find Tinkyada products in the 'health' section of Publix supermarkets.
  8. I find that Bragg's Liquid Amino is a palatable substitute for regular soy sauce. I've been off the wagon for a little while and recently had symptoms give me a gentle reminder to get back on.
  9. After health issues in the early 00's, I visited a naturopath that informed me that I was gluten-intolerant. Then, after some research, I realized that my mysterious symptoms and subsequent "thyroid issues" were likely the result of issues with gluten. I keep a watch on my gluten intake and have come to a new conclusion: perhaps my insomnia is also the by-product of gluten intolerance. I was on Levothyroxine for 2 years and had the absolute worst time sleeping. It was horrible. I sleep a lot better now, but I'm baffled by my new discovery. What's going on with gluten?!
  10. I was diagnosed with Hashimoto's a few years back. I'm fine now. Just recently went gluten-free and then I found this messageboard. I appreciate this post! If I only knew this back then!!! If only. Wow.
