  3. I haven't tried any buns or bread I liked that were gluten free in the stores.....but! I read some reviews advertised on the side of this site somewhere......and thought I'd check out the site and I actually placed an order. They got here yesterday and I had 2 ham sandwiches on the Chullah rolls! WOW! To Die For! (not the same death as with crappy gluten-free breads....) But I learned to LOVE and ENJOY a sandwich again! www.katzglutenfree.com I bought the small Chullah dinner rolls.....next time I will get the Large Chullah Rolls. This bread is soft - holds together - has a rich taste.....just like those yellow kaiser rolls at a deli. Their products are gluten-free - DF - and Nut Free. I WILL have a slider burger this week! So looking forward to it!
  4. I get reactions from sausage - fillers and possible seasoning issues. I make my own - try this recipe.....it's easy and delicious - I use ground pork or ground turkey - either way - it's gluten-free!!!!!!! Homemade Italian Turkey Sausage 1 lb. lean ground turkey2 tsps. garlic powder1 1/4 tsps. fennel seed, crushed1 1/4 tsps. sugar1 tsp. salt1 tsp. dried oregano1/2 tsp. pepper Combine everything. Cover and refrigerate for at least 8 hours or overnight. Shape into patties or crumble and cook until no longer pink. I just gave up on trusting processed meats
  5. In Grand Rapids, Michigan - a gluten-free store just opened called Saffrons.......since they are Celiac and with food allergies too - they opened a gluten-free store and I've yet to visit. I did hear they sell Udi's! I don't spend the extra money on gluten-free foods because in the grocery store - I buy Classico pasta sauces and soups (Progresso) or make my own. The gluten-free pasta I buy is only once in a while.....for spaghetti.....but I find that Bob's Red Mill site has a gluten-free dumpling and noodle recipe that I'm willing to try.....other than that - I do without the excess of bread products.......but would love to try the Udi's too........so I"m going to check out that store soon. I found a recipe for a cream soup base that is versatile - cream of tomato, cream of mushroom, and cheesy broccoli are variations to the base mix so I'm living on the 'cheap' there! I also started mixing up my own taco seasoning and chili seasonings too. Dollar store spices and I'm set for the year when I want nachos! I guess I should start posting more recipes......to share the findings of avoiding the gluten-free pricing in the specialty stores.

For me the blood pressure isn't the problem - mine is low to normal I've experienced a bit of overheating a month after gluten free - but then once or twice since then - until I had the pleasure of my first summer gluten-free. I started to threaten broken fingers if my brother touches that A/C! He thinks it should be turned off when he leaves at 2 for work and I get home at 4:45pm to an oven and a pi$$ed off mood..........stomping all the way to the cool 15 minute shower that doesn't work when the house is still struggling to cool down. I now keep the A/C on low at all times to maintain and regulate the temperature unless it jumps up a tad more outside then the A/C goes up to med. I'm very minimal on sugar except for the rum and Pepsi I enjoy after work. I will be bringing this and some occassional swelling in my legs with the occassional light headedness when I stand up after sitting at my desk for long periods of time to the doctor on the next physical. It was Oct I had my physical and diagnosis - it'll be Oct for the follow up and do it all over again - complete with all the changes my body now experiences.........but I'll have to say.......my mind is and mood is fantastic these days! So are my energy levels......wouldn't trade it for the world. Thanks everyone - I'm hoping we all can get past our 'NEW' issues as they occur. Hugs to everyone! Keep on fighting the good fight! T PS - the lasagna is to die for - but should do it either early in the AM or later in the PM - heat ya know....lol
  7. Ice Water - Cool or warm shower - A/C..............NOTHING will cool me down! I read it had something to do with an affected Thyroid that the heat intolerance and regulators act up. Not sure if it was hypo or hyper. I'm miserable and can snap someone's head off with my eyes if I can't cool down. I try to stand in front of the freezer and it isn't enough. If it's humid, the sweat doesn't evaporate but rather holds heat in - if it's arid or dry heat - your sweat will evaporate to cool the skin......so you think a shower would work! But nooooo........it holds humidity in the shower.....and the process happens all over again for me. I'm even the warmest person in the A/C office where 73.5 degrees isn't cool enough! I feel your pain and frustration. T

Here is a site for all gluten free medications - also a great list to bring to the doctors office if they prescribe you anything. http://www.glutenfreedrugs.com/ For the record - dayquil and nyquil are safe! Also - a list of Walgreens OTC meds are on this list so don't hesitate to go store brand too. My doc has a copy of this list for me too.....and he uses it!
  9. Fortunately I've known my coworkers for 10 yrs before diagnosis......and when I told them, they wanted to understand and were even supportive. If the donuts were brought in, they wouldn't say...."You can't have any!".....but then I wouldn't want any either......major bloat for the whole day and pants undone prior to diagnosis is NOT something I'd look forward to again. Now they see me bring in veggies and dip - grilled chicken caesar salads - chicken and wild rice soup - snickers bars - cheese and grapes...........and they all say......."You're so healthy!" and I have to grin. (aside from that snickers which is NOT but maybe one time a month for that little sumpin' sumpin. I never really cared for beer unless it was on the hottest day of the year and it was ICE cold. I prefer Sangria's or Rum and Pepsi these days.....and a great bottle of wine on occasion too!! I make a gluten-free chicken alfredo pizza with no flour crust that is to die for! Give it a shot.....use your imagination on the way you want it.... Deep Dish Pizza gluten-free 4 oz softened cream cheese 2 eggs 1/4 cup parmesan cheese 1/4 t oregano or italian seasoning 1/4 t garlic powder 8 oz italian cheese blend or moz shredded 1/4 c pizza sauce 4 oz moz shredded asst toppings dash of garlic pepper or powder and some italian seasoning for the top of pizza In med bowl - whisk crm cheese until smooth and creamy - whisk in eggs until smooth - add parmesan and seasonings - then stir in 8 oz moz until completely moistened. Spread mixture into well greased 9x13 glass baking dish - bake at 375 20-25 min. or until evenly browned - Let cool - when nearly cooled, pry up edges with spatula to loosen and slide under crust to loosen - this makes it easier to remove finished pizza later. Refrigerate until shortly before serving (dinner time) Spread chilled crust with sauce - then the cheese and toppings - sprinkle with seasonings - bake at 375 about 15-20 min or until bubbly - let stand before cutting. Alfredo Sauce (for pasta or pizza) This creamy white pizza sauce recipe has long been a favorite on pasta, but it's one of the best things to happen to pizza in a long time. 1/4 cup butter 3 cloves garlic, minced 1 cup grated Parmesan cheese 1/2 cup heavy cream Pinch of salt and pepper Melt butter in a medium saucepan over medium heat. Add garlic and sauté for 2 or 3 minutes. Stir in the cheese, cream, salt and pepper and heat through, stirring constantly. Remove from heat. It isn't an end - it's a beginning! Tena
  10. I can sympathize with your frustrations - I have gone thru pain like that most of my life. Even intimate encounters were painful! No doctor could find anything but a miniscule cyst.......hardly could cause that.....ultrasound showed that. FINALLY.......I got a doctor that scheduled a laproscopy and guess what he found. Adhesions. I had an infection or two as a younger woman and one was really bad.....washed away the good bacteria too much. The scar tissue grew everything together (hence the pain) and during the laprocopy - the doctor cut it away and told me that later on in life, I'd have to do it again. He said that my intestines were adhered to and not free to move causing the painful BM's - and since the other stuff was adhered too.....painful intercourse. I highly recommend the laproscopy and stay hopeful...........it's the ONLY thing that found and fixed the problem Stay positive and my heart goes out to you! Hugs! Tena

I THINK BACK TO THE DAYS THAT I'D EAT PIZZA AND AFTER ONE THICK CRUST WITH TONS OF CHEESE SLICE, I'D BE BLOATED AND HURTING AND COULDN'T BREATHE FOR FEAR OF BURSTING MY STOMACH..........AND I'M SURE YOU KNOW THE REST. NOW I DON'T REALLY MISS PIZZA......I MAKE IT NOW WITH A CRUST THAT I CAN DIGEST - THE DEEP DISH WITH EGGS AND CREAM CHEESE AND CHEESES.....SO SATISFYING! I DON'T MISS THE BREAD REALLY - AS I HAVE FLASHBACKS OF WHAT IT WAS LIKE WHEN I'D CHOOSE A SANDWICH OR SUBWAY OR A WHOPPER.......AND THEN FEEL THE SAME AS I DID WITH PIZZA. NOW I TRULY ENJOY THE LIGHTNESS OF SANDWICHES WRAPPED WITH LETTUCE AND I KNOW I'M NOT GOING TO FEEL GUILTY OR SUFFER WITH THE 'I CAN'T MOVE' RESULTS. I NEVER WAS TOO BIG ON CAKES OR COOKIES OR DONUTS - SO NOW WHEN I LOOK AT OTHER PEOPLE EAT THEM, I THINK TO MYSELF - THAT'S JUST TERRIBLE WHAT PEOPLE PUT INTO THEIR BODIES THESE DAYS. I'VE TURNED MY EATING HABITS ARUND FOR THE BETTER (EVEN IF I'M STILL NOT LOSING WEIGHT) HAVING MORE FOCUS AND AMBITION AND MOTIVATION THAN I'VE HAD SINCE EARLY 20'S. A LIFE OF DEPRESSION CAN STAY IN THE PAST - AS FOR ME AND MY GLUTEN FREE LIFE....LIFE IS WORTH LIVING AGAIN. gluten-free 9 MOS........AND WHAT A DIFFERENCE. TENA
  12. Sounds like someone is out to make a profit off us celiacs....hmmmmmmm I myself rarely use the pastas - instead I grab a potato peeler and take it out on a zucchini - saute with pesto and its awesome.....even use slices in lasagna instead of pasta....mmmmhmmmm!

  15. Hi GFG Welcome When my doctor told me to go on the gluten-free diet and that when I get glutened it attacks my thyroid....I did some heavy research. First it was hot flashes and racing heartbeat that I could here and feel. Out of concern for the heart racing.....I stumbled across a site that helps you determine any food allergies...or reactions. Take your pulse....eat some cheese or drink some milk....10 min later take your pulse again....if it jumps up...that means your body is fighting to digest it quickly and you're having a reaction. It works with soy and any other individual food you eat. After about 30 min, your pulse should resume back to what it was before the first taste. I check mine every 10 min for 30-45 min. That happens to me with Dairy....normal pulse is about 88 - but can spike to 120 in 10 min. I also started the Specific Carb Diet and got rid of most of my bloating and heavy fog. I hardly eat any bread products anymore - maybe once a month and don't really miss it. The SCD has also cleared up the vision fog too - or strain or blurriness or lazy eye. I eat grilled chicken with tomato and onion wrapped in a romaine lettuce leaf and add a thin strip of ranch yogurt dressing for my work lunches and it's perfect. Keeps me focused. The SCD will dwindle down your sluggishness too. Drink water or tea - and stay with the veggies - some fruits and protiens for a while and see how you feel. I do like a glass of wine at nite so that is the extremes of my carbs at this point....not deprived. I also take 2000ui of VitD for the mental issues...and B-Complex with a multivitamin every day to replenish what my autoimmune system has altered. AND......I take papaya enzymes after I eat a meal with more carbs - it really eliminates the bloat. I'm gluten-free since Oct 2009 and I'm still learning all this stuff. But take it seriously - it's your health for life.
