  1. Symptoms Unlike All Of Yours

    If you truly are Celiac, then continuing to eat gluten is not good for you and you will not be able to heal what has happened in your sm intestine. I had off and on symptoms of IBS for many months. The first GI Dr. wrote me off as having IBS. I was having frequent bouts of diarrhea, I'd loose a few pounds every time and not re-gain it back. Then I'd be normal for awhile. Other symptoms of Celiac which neither my first GI Dr.could put 2 and 2 together and realize he should have tested me for Celiac was horrible farts(embarressing!)Stools that floated and were difficult to flush. I told him AND my Primary care physician, neither concluded it was possibly Celiac. I continued to loose weight. From November 08-Feb of 09 I lost 20 lbs.From Feb09-Aug 09 I lost another 20 lbs.Then I lost another 25lbs, total of 65lbs. My new GI Dr. said IBS will cause you to loose some weight during the diarrhea phases, but you should't loose as much as I was loosing so quickly. I never had headaches after eating gluten. What brought my Celiac to a head was after my hernia surgery, I got a UTI from being catherized in the hosp. I was put on CIPRO. It gave me diarrhea, I was going several times a day even taking Imodium. The week before T-giving My surgeon who had done my hernia surgery had put me on Flagyl for the diarrhea, the thought at the time I might have C-Diff. He then wanted me in for a sigmoidoscopy. I was neg for C-DIFf. With going so much I got dehydrated, was in the hosp for 6 days. It was then they ran more tests, another colonoscopy, an EGD and sm bowel series, it was then the new GI Dr. who diagnosed the Celiac. Have to say, I didn't know whether to cry of just be glad they finally knew what was going on with me and how to manage it!
  2. I have been trying several products(gluten-free) of course. I have found that my favorite pancake syrup is gluten-free (Vermont Made)brand. I tried the 123 gluten-free Buckwheat pancakes mix is really good. The recipe makes about 12 nice size pancakes. The 123 Gluten-free poundcake mix is on the expensive side, but really very good! Salad dressings I like are DREW'S (the gluten-free ones. I'm going to have to ask GIANT to order that flaver I like the best the Raspberry Vinigrette, I had that during my recent hospital stay. Dr. SCHAR's pizza crusts are really pretty good also, you put your own sauce and cheese on it and bake it. Do you folks have any other suggestions of items you have tried and liked or didn't like?

    Are you having any other symptoms? I astarted noticing a change in my eyesite and it progressed to numbness and tingling in my nose and lips. My calves were also 'buzzing" and humming, it was the strangest feeling I ever had. Basically I think with our condition we really need to keep an eye on our electrolytes. So, i don't know if the Celiac is a part of your problem or not. But I know my eyesite was really bad(distance-wise) until i was treated and given supplements for the imbalance.

    Actually, I made my chocolate chip cookies only substituting Bob's Red Mill Baking flour(gluten free) I have to buy some xanthum gum, his gluten-free baking flour dosen't have it in it, Pamala's does, though. they turned out very similar to the Regular(wheat) flour. I actually put peanut butter into part of the mixture and it gave it more body and they were also good.
  8. I agree about the Brownie mix. I also tried Pamala's Pancake and Baking mix and it was very good also Actually, I made my sister-in-laws chocolate cake (one you put hot coffee in) and used Pamala's gluten free baking mix and it turned out ok, except it sunk when i stuck the toothpick in to test for doneness. I think because my baking soda had expired. but oh man it still was good and so moist and chocolatey!
  9. Bread Machine

    I used Pamala's Pancake and Baking flower to make my favorite chocolate cake, just substituted the flour (instead of the wheat flour) and it turned out ok. It didn't rise as much as the traditional recipe,but i later checked the box of baking soda,it had expired, so maybe that was why. I'll need to get some new baking soda and some aluminum free baking powder. Pamala's had the xamthum gum already in the mix, Bob's doesn't. I'm planning on trying his Pizza dough mix sometime soon.

    How will it get contaminated by the wheat bread? The sides are seperate and have better than an inch of space between the sides? My family knows my side is the left side. I want to get a little Green(gluten-free) sticker and put it on the handle also. the sides also work independently and have seperate pull out crumb trays, we made sure of that. I assume if there isn't seperate crumb trays it could contaminate it.

    My husband and i used our Christmas gift certificates from KOHL'S and bought a new 4 slice toaster with individual sides. I have my side, they have theirs! Gave me an excuse to get a new one!
  13. Feeling Hurt And Depressed

    Try this for your stuffing. Bake some extra baked potatoes, if you have found a gluten free bread you like, you can make cruotons out of it, cut up celery and onion. put some butter in your electric fry-pan and sautee them all together, you can use a little milk for moisture of I understand swanson's broth is ok to use from my gluten-free cookbook. then just bake it in the oven for a bit. We can eat poatoes! The firehouse Aux i belonged to many years ago, the cook ALWAYS mad potato stuffing, it was so good!
  14. Cross Contamination Question?

    We just bought a new 4 slice toaster, I will have my OWN SIDE that I will use. My son and husband will use the other side ONLY.

    That is one of the main things I realized about myself with this Celiac(had not been diagnosed as of then) But I noticed and so did my husband that my farts(gas) were horrible! I had rumblings in my gut a lot, I really thought i had IBS since that was what my first GI Dr. thought it was. Too many GI Dr.s assume without testing you and listening to your other symptoms, like stools that float, are hard to flush inless you have a good toilet to suck them down. I never had the severe pains, but just going to the BR a lot and loosing a lot of weight wich is a definate indicator.
