I am 53, gluten free for 2 1/2 years and can't give advice on young children. After saying that I just wanted to let you know that I get sick if I eat the wheat/gluten free oats. I saw that your 2 1/2 year old was eating those. Good luck in your search. Keep at it mom, children are so precious.
I eat out alot and I know I am taking a risk each time. Many restaurants in my town try to accommodate me and I appreciate all their efforts. If I get stung twice, I don't go back. That's my rule. Would never consider suing. I have had one Mexican restaurant refuse, therefore I don't eat there. We are responsible for ourselves.
Yes, it can be that fast. When I went gluten-free, I woke up on the third day of gluten free and the headache that I had was gone. I had this headache for 2 years. The water weight and bloating I had was gone. Over time all of the symptoms in which I had complained to doctors about for about 5 years was gone. I only get these symptoms if I get gluten. Been gluten free for just over 2 years and will continue to be for life! Welcome to the gluten free world!!!!
Last Thanksgiving was my first gluten free Thanksgiving. I did have everyone at my house and yes it was totally gluten free. Maybe you can cook a mini-thanksgiving dinner on Wednesday evening and take some leftovers for you the next day. There are some wonderful gluten free stuffing recipes out there. It doesn't have to be huge meal but maybe some of your favorite foods. Mom will have to get over it if she gets offended by you not eating her food. Make sure you make a good dessert - maybe even one to take on Thursday with you. I have a great recipe for banana bread and banana pudding. The banana pudding one would be large enough for everyone. I know last Thanksgiving I was nervous about everyone eating gluten free but it turned out great. Good luck!!!!
I was on Synthroid for the lst year I was gluten free. I didn't realize at the time that Synthroid for causing a problem. I am very strict with my diet and did not realize that the dizziness/vertigo I was still getting was caused by Synthroid. When I read back in the Spring about Synthroid possibly having cross contamination, I switched to Levoxyl. Stopped the dizziness/vertigo. Have not had a problem since. Good luck in your decision.
Since M&M's started making the ones with pretzels, some bags of regular M&M's have been contaminated. I used to be able to eat M&M's but it's a gamble. The bag may be fine or it may not. I called the company and they told me that many of their plants have been cross contaminated with the new ones with pretzels. They started making them last 8/10 and it was in October that I started to get sick from them. Be careful and don't buy any holiday ones because they are made at their overflow plants. They stated that these plants are definitely contaminated.
As far as I know Texas Roadhouse does not have a gluten free menu. But our local Texas Roadhouse's manager happens to have Celiac so I have eaten there many times safely. But one time after eating half of my salad, I came across a couton. The manager stated that a new employee didn't realize the importance of making a new salad if they accidently start to put coutons in it. He explained to me that they keep their salad mixings on one side of the kitchen and their coutons on another counter so it didn't get in there by mistake. He informed the employee of their mistake and has not happened since. He told me their chili is not gluten free. I'm lucky, he keeps me safe!
The trick to using Betty Crocker mixes is to always use 1 extra egg. I did this to the cookie mix and it turns out great. Also I use their yellow cake mix for the base for many recipes. They have an awesome banana bread recipe on their website. I put in 1 extra banana but use the recipe as is from there. Have tried many of their recipes on www.bettycrocker.com/glutenfree and each one is really good. No one can even tell the banana bread is gluten free - have taken it to several functions and someone always comments how good the banana bread is. Good luck!
Yes you definately been glutened. Unfortunately it could have been the vanilla or the pans and items your friend used to make it for you. I'm usually ill for about 3 days, depending on how much I was glutened. All the symptoms you mentioned are the ones I get. Cross contamination, I believe, is our worst enemy. This is probably what happened. When well meaning friends and family try to help us but because they eat gluten their kitchen and tools they use are contaminated. Mixers, pans, spoons, countertops and just their kitchen could be unsafe. I hope you are well soon and just hang in there, things do get easier as time goes by. (sorry for the post before this one - I hit the wrong key!)
Just to let you know Synthroid cannot promise that their product is gluten free. I just went through this myself. Been gluten free since 01/10 and my thyroid medicine was switched 04/10 to Synthyroid from the generic. Started in last June, started having vertigo and dizziness off and on up to this past April when I learned that it was possible Synthroid could be getting cross contaminated. Levoxyl (King Pharmacy) states their item is gluten free and I switched 4/16. Boy have things improved. I could tell within 3 days. No more dizziness. So maybe this could prevent the Vitamin D from absorbing. Just a thought. I don't know about Cytomel but I would check on that too.
Swelling of my ankles and legs was one of my main complaints before going gluten free. Then my stomach started to swell and I was always bloated after I ate. When the doctors diagnosed "celiac" and told me to go on a gluten free diet, I lost 6 pounds within 1 week and I know it was the fluid that I have been carrying around for probably 3 or more years. I lost over 20 and have been a constant weight (happy weight) for over a year. When my feet were swollen I had a hard time walking and would have to lie down alot. Went gluten free 1/10 and haven't looked back. Hope this helps you.
I have been gluten free for 1 year now and the best way to satisfy my cravings is to find gluten free ones. Just last night I had pizza. I make this a couple of different ways but the fast way is this: Use corn tortillas, pizza sauce (I found a great one at Harris Teeter, starts with De F-something-can't remember the name), cheese and whatever toppings you want - for me pepperoni. I first put a small amount of olive oil in a fry pan. Lightly sprinkle sea salt in the oil. Fry the tortilla on both sides. Remove from pan and use paper towels to dry the tortilla. Top with sauce, cheese, pepperoni. I put tin foil in my toaster oven and place the tortilla on it. Toast and I then I have a delicious pizza!!!! I have made larger pizza's using Chebe pizza crust (very good). To satisfy my muffin cravings I use Udi's chocolate or cinnamon muffins - very, very good. Keep hunting and you will find ways. I have a cruise scheduled with Princess Cruises in April. This will be the first time we have been cruising since I was diagnosed 1 year ago with Celiac. Has anyone else been cruising, on which cruise line and what was your experience? Any suggestions is greatly appreciated. Thanks!
I just ate there today. I have eaten at Cracker Barrel many times since going gluten free 01/10. I have not been glutened so far. I always tell the waiter that I'm gluten free and I ask them to please tell the cook to be careful. I have had grilled pork chops, green beans, carrots, fried apples, grilled hamburger steak, sirlon steak, baked potatoes, eggs, bacon (haven't gotten the nerve to try the grits yet). Sometimes they even have the manager come over but they are so use to me coming about every other week that doesn't happen anymore. Good luck!
