      Sensitivity Levels Among Us
When I was diagnosed with celiac disease 2 years ago I was told I was "lucky" because I can feel the effects of gluten when I ingest it. My dietician told me there are many celiacs who have no symptoms from gluten and that can be even more dangerous because it still damages the body.
What are your thoughts on this?

How come some with Celiac Disease react to trace amounts of gluten and others don't?

Do we all have the same amount of damage in our bodies because we all have the same disease, regardless of our varied reaction levels?

There is so much I still don't know.

But aren't trace amounts enough to make some of us sick?
Personally, I know everytime I eat Dry Onion Soup Mix I get sick. It does not surprise me at all that there is barley in it.

I'm not sure about the eggnog, but I want to encourage you on your newest journey of being gluten free. It is a challenge and may take some time to get used to, but it is worth it. You have come to a good place here at The people here have been a tremendous source of info and encouragement to me. Sometimes it's nice to know you are not the only one who is afraid of crumbs!

I Did It...we Are Now A Gluten Free House!
Thank you to everybody who encouraged me to get the gluten out of my house.
My friend came over 2 weeks ago and took all my gluten away. We also got rid of all the containers, pans, spoons, and cutting boards that possibly had gluten hiding in them. She wiped down all my cupboard shelves and cleaned out my drawers. Then I washed all the hot pads and oven mitts.

      I can't believe how free I feel!

If anyone is debating whether they can make the switch to being totally gluten free, I say go for it!
Life is too short to be thinking of gluten and cross contamination all the time.

What are quinoa flakes? We are now a gluten free house and my husband misses oatmeal tremendously. (I react very strongly to even the gluten free oats.) Maybe I'll try to find quinoa flakes for him...and me!
      Are they any good?

That is just crazy! Cross contamination is a HUGE issue for those with celiac disease. Just ask any one here!

You have come to the right place! It helps so much to talk this stuff out with others who live with it every day.

Do you still have gluten in your house? Cross contamination is a tricky, serious issue. Think about toasters, hard to clean corners in cake pans, shared peanut butter or butter with gluten traces, etc.

Also when going to restaurants look into all the possibilities of cross contamination (cc). Are they making the fries in the same vat as the breaded chicken or onion rings? Most people don't know what gluten is, let alone how to make food for someone with celiac disease!

Don't forget to wash all your measuring cups/spoons before starting.
It's also a good idea to use fresh hand towels and dishrags.
You can never be too careful!

It is nice that you are willing to do all this research to bake for your friend.

      What about Cocoa Pebbles?
I've had those and done just fine with them.
I have also made some good "Cocoa Pebbles Bars" instead of Rice Crispie Bars. They are very good and great crowd pleasers at social gatherings. Just remember to set a few aside for yourself first to avoid cross contamination!

      What Are Your Symptoms?
Just curious if you always have the same symptoms when you consume gluten or if they vary? My symptoms seem to vary. I am trying to discern whether I am reacting only to the obvious gluten or if I have other food issues too. Please share your experiences with me!

Thanks for all the great ideas! I am excited to give my baby good food and not be so paranoid about him getting full of gluten and then loving me up as only sweet babies can.
I think even my older kids will enjoy the food that was mentioned. I'll pass these ideas on to my brother for him to give my gluten-free nephew.

      Gluten Free Toddler Food?
In making my house gluten free I have to figure out some gluten-free finger foods for my 13 month old.
Cheerios, graham crackers, and Goldfish crackers are no longer options.
Can anybody give me ideas of tasty snacks for a toddler on the go?
