  1. I love udis bread as well, but I prefer to make my own. It does use a lot of different flours, but I also do a lot of baking so I always have them on hand. My kids, who are not gluten-free, prefer my homemade gluten free bread over regular wheat bread. I think it ends up being cheaper and I can make it when I need it instead of going out to have to buy it. And we kinda live in the sticks so I have to drive at least 30 minutes to the closest place that has udis. I got the recipe from gluten free mommmy blog. I don't think it is an acitve blog anymore, but her recipes are still up and there are a lot to choose from.   2. I deal with this a lot for my DS who is 3 years old. He doesn't have celiac, but he has many food allergies. I am the one who is gluten free. We've known about his allergies since he was 9 months old. I pretty much take food for him unless I know what is being made, but it is still easier and safer for me to bring his food for him. All my friends were/are very supportive of my son and me. They are used to us bringing food and you will get used to it as well. They also don't want to hurt him or be responsible for sending him to the hospital b/c of him eating something he shouldn't. I have no issues telling others and bringing food b/c he is my son and I will do anything to protect them. I also am very apologetic, but most people understand. My DH is very supportive of proactive as well and that helps having him on "mu side", if that makes sense. Even my 2 girls (7 and 5) are protective for their brother. You will get used to it and you will do great!
  3. I made some homemade pesto today and I will have that with some pasta and leftover grilled chicken. Will aslo have some roasted veggies that I made earlier.
  4. Your waffle sandwiches sound so good!! And I agree, thank goodness we can still have ice cream...and chocolate!
  5. I, too, use grapeseed oil and olive oil. I use coconut oil as well, but don't prefer the taste as much. But I do love coconut oil in baking.
