About Me

This is my gluten-free story: I've suffered with IBS and mild fatigue for years. In August 2010, after a conversation about my IBS with my dad, I went looking for a good book on eating for IBS. That really helped me to understand what made me sick and what didn't. A few weeks later, my husband heard about Celiac's disease and the symptoms so he suggested I look into learning more about it. I spent the next month being very frustrated going on and off a gluten free diet while trying to stay on an IBS friendly diet. When I noticed the differences in my energy level comparing the weeks I was or was not gluten-free, I decided that I probably had gluten intolerance. I scheduled an appointment for the end of October with my family practitioner and told her my story. She agreed that I should stay on the gluten free diet and that in about 2 months I should be able to start adding some of the IBS aggravating foods back to my diet. I've already noticed a huge difference in my energy levels and a huge decrease in IBS symptoms. Now if I can just learn about good gluten-free substitutes for ingredients I use to make my favorite meals and desserts. Gotta have the desserts!!!!
