  1. Thanks for the information. Is my exhaustion a result of celiac disease? I have not cheated on the diet at all and have been on it for approx. 10 weeks. I have accidentally eaten something a couple of times that may have had a small amout of gluten in it. It seems like I would feel a lot better by now as far as being tired, etc. Also, I was diagnosed after having an upper GI. Is it reasonable to ask to be retested to see if the damage is gone? I have a doctors appointment next week and feel like for my emotional sake I need to know that what I am doing is making a difference. I also get a numbing pain on the right side of my body at night. It's hard to explain, but would this be a result of celiac disease?
  2. I was diagnosed 2 months ago and have been trying diligently to be gluten free with only a few mishaps. What symptoms will I have if I eat something with gluten? Before being diagnosed, I would get severe stomach pains that would result in an ER visit about 3 times a year. Why would I only have these symptoms once in a while? Its hard for me to accept this disease when I had such few outbursts. For me, I would accept the few trips to the ER to eat normal again. Also, after starting my diet, it seemed like I had an energy burst. Lately, I am so exhausted and tired that I can barely function. I felt this way prior to my diagnosis but why do I feel so tired now?
  3. What is the best cookie crust recipe for cheesecakes, etc.? Is there a gluten-free chocolate cookie crumb mix I can buy? What about a substitute for graham crackers? I made a cheesecake with a crust recipe of gluten-free vanilla wafers (home-made), and it turned out like a peanut butter texture. Any suggestions would be great. Thanks.
  4. For those of you in Michigan, do you know if Sam's Joint BBQ sauce is gluten-free? I have the "Sassy" kind and it appears to be gluten-free. Of course, Sam's Joint does not have an e-mail for me to contact them.
  5. I have recently been diagnosed with celiac disease. I am wondering what you would recommend as "the best" gluten-free hamburger buns and white bread (pre-made) and where I can find them. I like soft, white bread (use to eat Soft-N-Good bread). Thanks.

  7. I was recently diagnosed with celiac disease. Just trying to figure everything out. I read somewhere that sour cream may contain gluten. What ingredient would I look for if it contained gluten. Also, what about commercial sour creams from restaurants?
  8. I have just been diagnosed. Been attempting gluten-free diet for two days now and I'm hungry! What should I keep on hand to snack on? Is Jell-O okay? What about ketchup and mayo? It's very frustrating to go to the pantry and find nothing to eat! Any suggestions would be great. Thanks.
