The past few days I have gotten off track and have been cheating left, right, and center. Cookies and bread at work, cookies as I walk home, candy that's unsafe... I keep telling myself each day that I will stop, but here I am binging on this stuff again. I am having a lot of trouble getting back on track. Have I set off some horrible craving reaction by starting with this stuff? How do I stop this?

    9. aljf added a post in a topic How Soon After Becoming gluten-free Should I Get Blood Re-tested?

      I heard that--
I saw Dr. Susie Lee at the Columbia U Celiac center, and she suggested doing follow-up blood work after 6 months and then a re-biopsy after a year.
(She also had me get a bone density scan.)
She's really good-- I recommend her!

    10. aljf added a post in a topic Abdominal Distention?

just read this and have to add my 2 cents--

my whole life i have had long skinny limbs and a big bloated belly! i still have it, even now that i am (mainly) gluten free. when i lose control and eat gluten, though, my belly swells way up for days (like today-- could not resist the pastries and xmas goodies yesterday at work).

in addition, it is uncanny to me how many of us celiacs either have or have had eating disorders. (i am in that camp as well.) i wonder what the relationship could be-- how they are correlated, or if one can cause the other... i looked for some scientific research on this topic, but i couldn't really find any.

      balsamic vinegar IS gluten free.
the problem with balsamic vinaiGRETTE dressing is that often other things that are not gluten-free are included. for example, quite often soy sauce is used in that dressing, and soy sauces often have wheat in them. stick to plain vinegar, and you should be fine.

    13. aljf added a post in a topic Gluten-free Bakery In Nyc!

a friend of mine brought HHH's cupcakes to my birthday, and they were fine. a MUCH better option, imho, is the fudgie at risotteria-- 2 fanTAStic chocolate chip cookies (that taste light and chewy like "real" cookies) with a ton of chocolate fudge frosting between them. probably dessert for a family of 8. i finished it in a night.
      gobble gobble.

    15. aljf added a post in a topic Is A Tiny Amount As Evil As A Pizza?

some of this information you are getting is unclear.

i went to the celiac patient education day at columbia u's celiac center to find out the answer to questions just like this one. one of the talks as "how much gluten is toxic" (carol semrad, md, u of chicago)

cited a study "dose-dependent effect of gliadin" where patients were given various doses of gliadin (what's in gluten) over 90 days. they found basically that the "safe" level of gluten you could have per day is less than 1/8 tsp of flour. "safe" meaning no biopsy-detected damage or symptoms. so not much.

as for "cheating," the studies show that the bowel regenerates itself every 5 to 7 days. so it should take about a week for the inflammation to calm after being exposed to gluten. and the amount of inflammation is more or less depending on the amount of gluten (crumb vs. pizza).

i also recall reading a study (which i'm sure you can find online) that showed that after 5 years of eating 100% gluten-free, celiacs had no more risk than "normal" people of the stomach cancers, but that celiacs eating gluten had greatly increased risks and celiacs eating somewhat gluten free ("cheaters") had a higher than "normal" risk but not as bad as the full-blown. (so, again, crumbs not as bad as pizzas.)

hope this is helpful. i want to stress though that you should try to find these sorts of studies and ask doctors-- although a lot of patients will give advice on these boards, it's not always correct.
