  1. I was at Whole Foods yesterday and in the fridge/deli area I saw an uncooked/fresh gluten free cheese pizza and decided to try it. It was THE BEST!!! I added some jalapenos and baked it for 10 minutes. AWESOME!!!!!!!!!!!!!!!!!!!!!!!!!!!!! The ingredients listed potato flakes. Does anyone have a pizza dough recipe with potato flakes? I really want to make this dough. Thanks!

    Thanks! I'm not sure why I had to buy the 12 inch cast iron skillet...I felt like my wrists were gonna snap pulling that beast out of the oven. Probably for the same reason I had to buy the largest screw driver I could find at Home Depot. All those years of watching Home Improvement as a kid messed me up. I have an inner Tim Allen telling me to go bigger. I can't even use that screw driver, it's way too heavy. I think my biggest mistake here was assuming I could just sub gluten-free flours in a regular dough recipe. I used rice flour (both white and brown), tapioca, potato and xanthum gum. I did everything by weight, as the original recipe said. Then I measured out how many cups it was to see how much xanthum gum I needed. I used 1 t per cup. I was way wrong though. I found a gluten-free recipe after that only called for half the amount of xanthum gum and more yeast than I used. Do you have a gluten-free dough recipe that you would recommend?
  3. I have been majorly craving stuffed Chicago style pizza and I finally attempted it. It did not turn out as planned. The bottom layer of dough was more like a hard baked pasta and the top layer was at least edible, but not great. It was only okay because the cheese under and the sauce above it made it softer. Does anyone have a good dough recipe that would work for a stuffed pizza? BTW...the sauce was great! I used Trader Joe's stewed plum tomatoes and basil, tomato puree, red wine, garlic, oregano, crushed red pepper and black pepper. Really good. Too bad it and tons of cheese just went to waste.
  4. You are NOT too young for gallstones. I had my gallbladder removed in June (28 years old at the time) and had 20 gallstones. You could have gallstones and your doctor should have sent you to get an ultrasound. My GI said that no doctor is supposed to diagnose IBS until everything else is ruled out. He immediately sent me to get the ultrasound, put me on heartburn meds to see if the pain went away and set up an upper endoscope (that was canceled since I was getting surgery) before he'd say it's IBS. I must admit that he did say that it probably was IBS and he didn't think it was gallstones or anything else, but the tests are what prove things, not a doctor's thoughts. It was gallstones. I seriously can't stand doctors like this. It's so frustrating! Good luck and I hope you find a new doctor that actually knows what he or she is talking about and doesn't just go by his or her feelings.
  5. Hey everyone, I made some banana bread today and I started thinking about my friend and how her bird died from her non-stick cookware. She had her bird autopsied and the vet said it died from the gas produced by cooking with teflon. I already use cuisinart's green gourmet frying pans and stainless steel cookware, but all my bakeware is non-stick. I don't have a bird, but I find it hard to believe that the gas isn't harmful to us, too. So, what would you recommend? I saw a Lodge cast iron loaf pan that looked good, but would ceramic be better for baking? Or, should I just go with stainless steel? Thanks!
  6. PCOS And Celiac

    I was diagnosed with PCOS before celiac and I still feel like celiac caused the PCOS symptoms. I don't have high triglycerides, too. In fact mine are low...64 on my last test. I've been gluten free for a few months and I thought that my period would come back since it started a little at first, but now it's gone again. I did get glutened a couple times, so that may be the problem. I'm on bc and I thought bc was supposed to regulate periods but I haven't had one for almost a year...just that little break through bleeding that I thought was a period coming back. My doc did a d and c to make sure nothing was wrong with my uterus and it was fine. Hopefully it will get better soon.
  7. Soft lips and carmex are gluten free, cheap and you can find them at almost any store. I just got SPF 20 soft lips in cherry flavor at cvs (soft lips says gluten free right on the package). The carmex SPF 15 is on sale 3 for $3 at Walgreens (with in ad coupon).
  8. YES! My tongue gets swollen and it feels like my throat is closing up, along with an intense burning/eating away pain in my stomach. Almost like that burning feeling when you drink too much alcohol and didn't eat enough food, but 10 times worse and not in the actual stomach...all over. I've had a thyroid scan, brain mri and then told to keep benadryl with me at all times, because all the imaging came out normal even though my doctor said my thyroid was swollen. Right when I went gluten free it all disappeared! I 100% think the symptoms are worse when I get glutened. I think it's because you're not used to it anymore and when it happens you realize how painful and strong the symptoms actually are (I'm pretty sure I read someone else on here say the exact same thing). I got glutened at Thanksgiving dinner. The next day, my throat feeling came back along with that burning stomach pain and I almost wanted to go to the emergency room. I felt like I couldn't breathe, even though my lungs are fine. I was so bloated that I couldn't even put on pants that I just wore days before. It sucks so bad. It looks like both of us need to be more careful I think that the eating away/burning pain and the swollen tongue/tightness pain in the throat is us feeling our immune systems attacking our bodies. But, it's just a theory. As for people not getting it, I understand. A family friend actually looked at me at Thanksgiving and said that if I just drink water before eating gluten, that I'd be fine because the water will make it not be absorbed. WTF!!!! I don't know where people come up with this crap. Like they know more about it than we do. And I know how I got glutened. 1) That same famly friend cut the normal pie and used the same knife to cut my gluten-free one, and 2) The cook (another family friend) was drunk and as she made my plate she forgot if she poured my gluten-free gravy or the regular one. I should have said something, but I didn't want to be a rude guest and it was the first time I'd seen them in years. Plus, I told them about my diet before I agreed to even come to the dinner, so I just assumed they'd be careful. I will never try to be polite if it puts me in danger of getting sick again.
  9. Good morning everyone! I was very hesitant to get rid of all my gluten containing hair products (which took me years to find the right mix). I gave most of my products to my friend and I tried ShiKai Curl defining spray and bumble and bumble curl defining cream (which are both great), but the best/cheapest styler so far has been flax seed hair gel mixed with shea butter and olive oil. My hair is soft, conditioned and without frizz! No crunchies! I combined a few recipes I saw on to make it work for my curls (more shea=heavier cream). I boiled 2 cups of water with 1/4 cup of flax seeds to make the gel. After straining the seeds, I added about a TBSP of olive oil and 2 tsp to a TBSP shea butter (gel is still hot so it will melt the shea) and whisked the mixture until combined. Then I put it in a container and that's it! SUPER CHEAP and the best alcohol or other ingredients that may damage my hair. I'm also going to start making lotion at home. I'm just waiting for the ingredients to arrive FUN!

    Hey everyone! I have an awesome update! I was in the kitchen talking about how I think I accidently glutened myself because my stomach hurts and I'm feeling bloated, and the guy who made those comments walked in and asked if I have celiac disease. I looked him right in the eyes and said yes. Then I walked over to his desk and started talking to him about it and he had the nerve to say that whole modern medicine is what is keeping autoimmune diseases in existance, darwin, blah, blah...and I told him about the research suggesting otherwise. The look on his face was PRICELESS! I also added that on the positive side of my genetics is that I have pattern A cholesterol and genetically high HDL and that my family hasn't been affected by any heart problems and other than my mother, my family have all lived long lives. Then he said that he suffers from high cholesterol and that heart problems run in his family. And, of course, I DO NOT wish anything bad on him or his family...but it was nice to hear that mister so-called perfect isn't perfect after all. Maybe he shouldn't be talking about modern medicine and autoimmune diseases and focus on his own issues (that modern medicine helps). Oh, and I'm no longer in the feeling sorry for myself frame of mind. I have felt so frinkin' awesome since going gluten free (except for today), that I don't care who knows I have celiac disease. And I love the trader joe's gluten free waffles. Man, they are so good! My only problem now is my skin. I am having major rash, itching and dry skin issues. Hopefully these will resolve soon. Hair Products - Dove Shampoo and Conditioner, Infusium 23 leave-in, ShiKai Curl Definer Spray Deoderant - Dove Laundry detergent & Fabric softener - Purex detergent and purex crystals (sorry, I don't have sheets). You can get purex detergent super cheap! I have 7 bottles that I got for 0.97 each! They were on sale for 1.97 and I used 1.00 off coupons. Dishwashing liquid - Palmolive. These are always on sale for under 1.00 and you can easily get 0.25 coupons. Cosmetics - I love neutrogena's lip moisturizer with SPF 15 and urban decay is awesome. They emailed me an excel spreadsheet listing all of their gluten free items. Lotion - I use Vaseline Aloe Fresh lotion. I called them to verify that it's gluten free and they mailed me coupons! Body wash - I use Softsoap, dove or Johnson & Johnson baby wash (whatever is on sale). Hand Soap - I use Softsoap. The large refill bottle (64 oz.) is always on sale for around 3.50 at Safeway. Hand Sanitizer - I don't buy this, sorry. Toothpaste - I use colgate total. Mouthwash - I don't have any. I had to give away the bottles I had. I did hear that Act was gluten free and I waiting for a good sale to buy some. Facial cleansers/moisturizers - I use Basis Cleaner Clean face wash. You can get it at CVS for around 5.50. Once that's gone, I'm going to try honey as a face wash. I heard that it's really good.

    I am depressed! I was just diagnosed and even though I feel so much better now, it's still depressing. Especially when I over heard someone say what he said. It hurt my feelings and made me feel ashamed of something that I had no control over, but yes...I do have a right to be here. I need to just get over it and accept the fact that some people are just like that.

    Yeah, I guess he is right, but why is he only focusing on autoimmune diseases? That's what's really bothering me. I would be dead now, too. I've had pneumonia 3 times and that first time would have took me out. So yeah, he's right in a dumb kind of way I'll just think of it that way.
