Actually I went gluten free after my blood was drawn. The results came back a month later as negative for celiac. My doctor had already done an endoscopy for my "mystery pain" and never bothered to do a celiac biopsy. When I finally connected the dots to celiac he ordered the blood test. If I hadn't brought it up at all, he would have diagnosed me with Irritable Bowel - AKA, "Got no idea what's wrong with you and I'm too lazy of a doctor to figure it out."
Sorry, I'm a bit jaded by that quack.
I've learned that quite a number of people with celiac disease have negative blood tests. I just know that gluten makes me absolutely miserable.
I've been suffering from gluten exposure recently and because I don't "look sick," I started coming up with ways to describe how I feel. I have several symptoms, but the best thing I've found to get my point across about the pain is to say that it feels like I swallowed a porcupine.
I stepped it up by doing something fun. On my author blog, I dressed up a picture of a porcupine to "zombify" it. Green eyes and everything. "Forget brains...must destroy guts." Because there's no mercy to the pain and no perfect way to stop it than time. I'd post it here if you guys want me to, but I haven't even showed it to my boys because my 6-year-old is afraid of "zombies." lol. Didn't know if it would be okay here.
Anyway, creating the picture turned out to be fun. Kind of like hitting the bulls-eye on a dunk tank with a someone who knows how to throw insults.
So what are some creative ways that you can come up with to describe what gluten does to you?
My grandma is diagnosed with celiac disease. She "cheats" all the time. She was diagnosed in the early 90's and I don't think that she was ever taught how important it was to read labels and avoid cross-contamination. By the time I figured out my symptoms and got educated, her mind was too far gone to explain it to her.
I was diagnosed as gluten-intolerant due to a negative blood test. But I still suspect celiac disease because I believe my doctor was incompetent. Compared to Grandma, I'm super-sensitive and cannot tolerate the slightest cross-contamination. But I seem to have become more sensitive the longer I go without gluten.
If the people who "cheat" truly have celiac disease, they probably haven't let their bodies heal, so they don't seem to be as sensitive to gluten. They probably are just as sensitive as you, but they haven't given the treatment a fair chance.
There are liners that are designed for the crockpot. They are meant to reduce clean up, but if you feel you might get glutened from your crockpot, you can try the liners and see if it helps. I don't have a crockpot, only just saw and ad for them once.
I had to replace my non-stick pans and plastic utensils because I was still getting sick. Stainless steal is the best, but it took a while for me to get used to cooking on it.
If you want to find out what else you might be sensitive to, you could try the paleodiet for a while then reintroduce the avoided foods slowly. I want to do it eventually, but with 2 little boys who can be picky, I'm not sure I'm ready to try.
I make sure I have plenty of gluten free bars with me. Also, having a variety of bars helps because eating the same bars all the time gets old very quickly. Kind bars, Oskiri (sp?), Enjoy Life, and several others. If I'm going to be out for long enough to miss a meal at home and I'm not sure about the restaurants, I'll bring a can of soup with me. There are several varieties of Progresso that are gluten-free and Dinty Moore stew is also gluten-free. Sometimes, depending on the circumstances, I just go ahead and eat the soup cold.
Lately, I've been having good luck with Wendy's chili. But I still talk to the manager before I order it, just to make sure they've been careful about cross contamination.
Still, with any place, you have to be careful. I'm currently suffering from cross-contamination from Five Guys. I knew she ruined the fries for me. But I was starving, it was crazy busy in that food court even at 2 pm, and my boys were running everywhere. When the girl argued about the best way to bag the fries for a gluten free customer, I gave up too quickly. I gave her the benefit of the doubt, but sure enough I started with the cramps and nausea a couple hours later.
At least I got a couple free meals out of it this time.Usually my boys (who are 4 and 5 years old) are the ones to gluten me somehow. I'm not getting free food from them.
I've also had issues at 2 separate Chili's restaurants where they brought out my burger on a bun. But I never got sick because when I asked them to fix it, I explained they would have to start all over with a new burger. They apparently follow directions the second time around.
I've had family who had nothing to cut up fruits and veggies on except a wooden board. I've had them cover it in wax paper first, or just use a clean plate to cut on. I'm quite sensitive, so any extra precautions are worth it. It's the whole reason I don't eat at Subway, though they have "just salad."
