      I should know, but unfortunately I have no idea which tests were done. I'll find out when I go back. No one else in my family (that I know of) has Celiac. That being said, is it still possible for me to develop Celiac later in life if I'm Gluten Intolerant now? If it's possible, will remaining gluten-free decrease my chances for developing it?

      Gluten Intolerance Question
      I was tested for Celiac a few months ago and after my results came back negative, my GI doc said I must be gluten intolerant since my symptoms went away once I went gluten-free. So after being gluten-free for about 3 months, I decided to test the waters to see how badly I react since I have no clue of the severity of my intolerance. Well... I went all out! I had bread, pasta, AND bread pudding. Needless to say I was ridiculously full but guess what! No symptoms. Now I know this was not all in my head, so does anyone know what's going on? Is it possible that consuming gluten day after day will cause a reaction but having it every once in a while is okay? I'm going back to see the doc in a couple weeks but was wondering if anyone had some insight.

      I know where you're coming from. For me, going gluten-free has made me lose my sense of control when it comes to eating. When someone tells you you can't have something what do you want? You want that thing the most! So I feel like I've begun eating to gain back that control. It's only at dinner time and it's mostly on healthy things like huge quantities of fruit. I eat until I basically can't move and then I'm overcome by guilt. I quickly came to realize that I had a problem. I don't know if it's as serious for you... maybe you just really really like something, in which case I can also relate because I used to eat oatmeal once or twice a day every day for like a month because I loved it!

      My solution was to start going to Overeaters Anonymous meetings and to make small changes in my habits. I don't keep much easy to eat food around my apartment. Most foods in my kitchen either need to be dethawed or cooked (I've begun freezing everything to make it hard for me to grab for something). Some other things that might help... sit down at the table with a plate and silverware (mindless eating happens for me in front of the TV), take a walk when you feel yourself reaching for more, keep a food journal.

      And if it's not as "serious" as it is for me, then disregard but hopefully my advice will help someone. Good luck!

      I'm thinking of having a glass of wine this weekend but haven't had any since going gluten-free. What kinds, if any, can we have? I'm a huge dessert wine fan but any wines on the sweeter end would work.

      This is wishful thinking, but does anyone have any tips on reducing the bloating? I recently got glutened AND I'm on my period this week, so it's a double whammy. I haven't been able to eat much which is helping but any suggestions are welcome!!

      Grinding Flour
      I bought a 5lb bag of brown rice at an Asian grocery store. I don't mind eating it as regular rice, but I'd really like to try to make flour, as it would be more useful to me that way. Could someone educate me on how to make flour from rice?

      Gluten Intolerance
      I had the necessary Celiac tests done, they came back negative, so my GI doc said I am just gluten intolerant. He came to this determination after seeing the results coupled with the fact that my condition improved/disappeared after going gluten-free. He lead me to believe that gluten intolerance is basically an allergy: if I ingest some, I will be sick for a bit but no actual harm will come to my body. This is the assumption I've been going on since being diagnosed a couple months ago.

      But now I'm completely confused because of a post on another forum. The post is as follows:
      "Just because you're not diagnosed Celiac does NOT mean that gluten isn't JUST AS harmful to your body. Either your body manifests its reaction in other ways, or just damages areas other than the intestines."

      Can someone please explain what my condition means and if the above statements are true? I'm kind of scared I've been taking this too lightly.

      Gf Aspartame/splenda-free Diet Soda
      Wow, what a title! Does anyone know of a gluten-free diet soda that does not contain aspartame or Splenda? I suppose I'm okay with trying Xylitol but I'm trying to go with all natural and no or very low-calorie options. I'm asking for a lot, I know.

      I just discovered Kashi Cranberry Sunshine. I don't believe it says gluten-free on the box, but the gluten-free food list says it's gluten-free. It's REALLY good!!
