I didn't do any research before we went and my family ended up wandering into an italian place before i had noticed so i had a bit of a dodgy salad. it was quite gross and i didn't eat much of it. Later in the day I had some hot chips. I didn't check if they were gluten free but i was hungry.
I lost a little weight but not heaps. I was losing weight until I started eating alot of rice and pre-packaged gluten free foods. Almost a year after I went gluten-free I'm starting to lose weight, but more because I'm not snacking AT all and going back to basics with jsut salads and stuff. I wasn't overweight and I'm almost 21 so I've lost 5kg or so (well 3.5 but I put on 1.5kg muscle too). I'm still fairly bloated although it varies a bit now.
Thanks!! I didn't see the reply until I had put the dough in the fridge but went ahead and just substituted it hoping for the best. Haven't rolled the cookies out yet or anything but the dough was fantastic! Pretty sure I now love xanthan gum!!!
Okay so I'm not sure if this has been posted elsewhere but is anyone able to tell me if I can use xanthan gum instead of guar gum in a cookie recipe? The recipe calls for guar but I've never seen it where I live and only have xanthan. Do I just put in the same amount?

I'm in Australia so cooking heaps at christmas time isn't really nice because it is jsut so damn hot! Despite this, and rather stupidly as the air conditioner is broken, I've decided to make gingerbread men. Made some last night but decided to try again today, this time with xanthan gum. Little nervous as I've never used it but it jsut wouldn't stick.
My brother used to be on the gluten-free/cf diet years ago before compliance became too difficult and we went on a holiday to canberra and deeks was so yummy!!
I'm currently waiting on my gluten-free gingerbread men. Struggled a bit to get them to stick together but my mother came to my aid with a tub of nuttelex (we seriously have like 6 tubs in the fridge because we kept forgetting we had it!!!) I have now decided that I have to start using xanthan gum or something when I cook! The recipe was pretty dodgey though but I had decided to use some recipe which wasn't designed to be gluten-free because I didn't think I'd be able to find all the ingredients in the proper mix. I'd only seen the mixes at coles and my woollies have NO flour at all. They have a bread mix but that's it.
Speaking of which, has anyone else seen all the different flours they have in coles now? I got so excited because I'm in a regional area with no health food store so I've pretty much been limited to the mix until now! I just got the cookies out and they're really crumbly but taste nice so I'm thinking I'm going to go get the brown rice flour and xanthan gum tonight and try making them properly tomorrow. Might even make the dough tonight so I can refrigerate it.
I can't help with bread. I HATE the brand that starts with Z, or at least I think it was gross.
Oh and if anyone didn't know this, the home brand jelly beans at woollies are gluten free. They were out of stock EVERYWHERE for a few months but I spied them on the shelf on the weekend. Even better, they're still gluten free.
I've never used xanthan or guar gum. Admittedly I haven't done alot of baking, but I've made slices and cakes without it. Cookies haven't fared too well (currently trying to fix my gingerbread men ) but I suppose I've used almond meal instead of flour alot?
okay I'm in the same situation as you. I've been on campus until now so I'm moving out for the rest of my degree. When I'm at home, particularly when I first started the diet, I pretty much just had grilled chicken, sometimes with herbs or garlic, with lettuce, tomato and grilled red onion and capsicum. Mainly because my mum was on a diet and it was what she was having. She buys stirfry cut chicken but buying chicken breast and cutting it yourself is cheaper adn what I plan to do.
Another thing that is great are soups! I just had one tonight that was this: i grilled chicken with garlic and in another pot boiled water. I stuck in some carrot, some cabbage (like only a little bit), corn and celery plus 500ml of water. That simmers for 10minutes or so. I still have plenty of all the vegies left in the fridge and I reckon it would be 2 serves. Oh and once I finished browning the chicken and garlic I stuck that in. Oh and I also put some red onion in the soup because I like it Obviously it's better to make more because you can just have it for another meal.
Another soup I like is a bit of a minestrone one. I can't remember what I put in it but it's not that big of a deal:
For the first step:
-turnip (or parsnip i think)
(I'm sure you could stick other vegies in there if you wanted)
For later steps (ie don't stick them in the pot for the stock):
You also need some 'soup mix' which you see around and are basically packets of lentils and chickpeas. I couldn't find one that was gluten free so I just bought different types of those and mixed them together. The night before making the soup you will need to soak these in water.
You'll need some chili (if you like chili. you could leave it out) and/or any herbs you want to put in it
Instead of using stock, which is really salty and can be expensive plus not nearly as healthy, you make your own. You chop up those ingredients and put them in a pot with water. I can't remember how much but the more water, the less concentrated the taste will be.
After 2 hours or so you get rid of all the vegies that were in it. Make sure you keep the water, which i know is a really obvious thing to say, but yeah, just do that haha. Get your lentils which you have soaked, drained and rinsed and put them in. Also put any herbs in. Let it simmer for maybe 30 min or so. And voila. I'm pretty sure that was all there was to it. It was really yummy and SUPER cheap to make. You could stick some rice pasta in there if you wanted. I've also thought taking some of those chopped vegies and keeping them in there could be yummy.
As much as possible you should try to stay away from prepackaged gluten free stuff, because as you know they can be pretty expensive. They're also often fatty so it's not such a bad thing to make your own. Invest in a cookbook with gluten free recipes. I bought one recently (it was just a local person's book or I'd give you a link) that had some great recipes, though I know I won't cook many.
One I liked was chili and lime chicken. I can't remember quantities but basically you'll need the rind of one lime and the juice of three. Pair that with some garlic and some chili flakes and mix it all up. Get your bits of chicken and marinade it for a few hours, overnight if possible, drain it and grill it up. It's yummy and really only costs you the limes and the chicken. I made a HEAP and I could probably freeze it.
Oh and one important cheap recipe that is yummy is casserole. My mum and I make it the same way we always did, although we coat the beef in gluten free flour instead of the usual stuff and stick in gluten free worstechire sauce. To be honest with you, I really can't remember our recipe, but I'm sure you can find one easily enough. The great thing about casserole is you can easily get away with using cheaper bits of meat if you usually don't like them. It's also something you can make a heap of and maybe freeze?
My plan is to keep to as much natural stuff as possible. While fruit and veg can be expensive, they are cheaper than prepackaged things. The more you make yourself, the better. I'm by no means a great cook and most of the things I've listed are things I have cooked with my mother, not alone. They're pretty simple and all of what I have listed are things non-gluten free people have happily eaten. This may be good if you are living with some non-gluten-free people, but then again, you might not want to share.
As for baking and more sweet things, I haven't really cooked much in that way of things. I've made packet mixes, mainly because I've been on campus and on campus it is easier not to cook ehaps, at least where I was. Also I had more money then I'm sure others will be better at recipes for those sorts of things.

I'm actually going to vegas in january. I've found out that there is a bakery that is gluten free and newly opened (http://www.beaumondebakery.com/). Apart from that I haven't done too much research. I haven't really travelled either and this will be a big challenge as it's an overseas trip for me. I read somewhere that the bigger places seem to be pretty good, and here in Australia I often manage to do okay just by asking for a steak or chicken/fish done in oil because I have an allergy if nothing else is available. I've actually eaten out quite a bit and haven't really been let down, so hopefully this continues! I figure that I should be fine. Just as a precaution I'm planning to bring food with me, mainly things like trail mix etc. I'm also going to pick up gluten free things from a supermarket while over there. I try to stay away from dairy but, if the need arises and being gluten and dairy free is too difficult, I'll try to be low dairy.
I do that all the time. I seriously would struggle at the supermarket some days without my iphone! I usually just type in "is productname gluten free" and I get the answer straight away. Probably not the best way, but I'm usually checking ingredients.
My friends have been like this. I say friends but they really aren't close friends anymore. Earlier in the year when I had been gluten free 3 months or so one of them got cranky that I wouldn't eat donuts because everyone else was. She said just to suck it up and I was just making it all up anyway. That really hurt because I considered her my best friend. It's been the same with alot of dining options. For example, any group outings have been organised to places like pizza restaurants that have no option for me etc. I didn't confront them because it wasn't worth it. I mean, I could go and just sit there but I was still at a stage where I was adjusting to the diet so it just didn't seem worth it. These were people I saw all the time so I didn't think it was that big of a deal.
I, like alot of others, probably would confront your friend about it. I would probably try to go out to lunch with her, or maybe invite her over to dinner and cook something gluten free. Like someone else said, you could mention how difficult the transition has been but how it is so worth it because you're feeling so great.
I think that it is almost impossible for anyone to understand unless they've been there. It's especially frustrating when people who think gluten free diets are ridiculous and not necessary totally accept someone being a vegetarian. I'm not against vegetarians (and I was one in the past) but in most cases it is a lifestyle choice, not medically necessary. I'm not talking about religious reasons, or health reasons here because obviously those aren't personal choices. I've just had friends say it's not like I'm gluten free for a noble reason like a vegetarian is.... no joke!!

As for what I like... EVERYTHING!!! When I was younger I read ALOT and most of the books I read, mainly because of the availability, were thinks like Little Sister and Babysitter club and I just remember all the names of lollies and different foods that weren't available here. Yeah... from about 13 I wanted to travel to the US mainly for the different take-out and candy available.... yeah, I'm not even joking! Obviously as I've gotten older that's not as much of a big deal, but I just want to try as much as I can!!!
It's a little funny because my brother has now become much the same! All the things he wants to do in the US revolves around food! It's so cute!!!
I'm definitely keen to try larabars. I've read about them on here a bit and yesterday started looking them up. Hopefully I'll like them and can stock up on them and bring them home!!
I suppose I'm a little lucky that I'm intolerant as opposed to coeliac and I don't have much of a GI reaction (apart from bloating) and it's more dark circles and headaches. I guess if I have any mess-ups it won't be as big of a deal! Dairy on the other hand, after a certain amount, doesn't agree so well with me.
EDIT: OH WOW! I just looked up glutino and I am hoping I become dairy tolerant again in time for our trip because I do very muchly want the glazed donuts!!! Om nom nom
I'm a student and I work part time for my parents. The plan this year was that there were hot and cold platters and we would cook kebabs. I knew 2, possibly 3 of the 4 kebab varieties were safe.
The plan changed when no one cooked the kebabs. So there was essentially nothing for me. Thinking of the kebabs I didn't bring dip and biscuits or heat up pies etc. big mistake. I ate some meatballs that were on the hot plates and I suspect I got glutened. Later In the night I ate some of those Salami stick things on a platter because they often appear gluten free. Man was I hungry. Had to go through mcds on the way back (I'm in australia)
But yeah, I've only been gluten free for around a year but I've stopped going to many things where food is the focus. My 'friends' would organise to go out for dinner at places I couldn't go safely and wouldn't be willing to take my input on where to go. In the end I just would say I couldn't risk it. These are the same people who said I was exaggerating and a donut won't hurt. They said I should suck it up so it just wasn't worth it
