I am the quality manager for Axium Foods. We manufacture the tortilla chips you referenced. As you noted, our chips contain oat fiber; however oats are current not considered to contain gluten. The 3 primary sources of gluten are wheat, barley, and rye. Our supplier of oat fiber has tested their product and found it to contain less than 10 parts per million gluten, which is the limit of their test. I dont have celiacs, my child does and I am always trying to find a cheaper alternative while not risking his health. So would you eat them? Thoughts?
my son had pretty much all the same symptoms the biggest one was weighing less at 1 yr than 6 months and crying constantly. He was "diagnosed" with celiac from a family doc from a blood test and diet response-we didnt do the scope. We saw a big change, but not everything went away. We found that he also couldnt have eggs, red dye, processed meat,corn and most processed foods. (just diet elimination is how we discovered these) We got much better-I have read stuff about leaky gut and I think that is what was going on. When his stomach healed we were able to add those back in(the processed stuff in moderation). Now just gluten free he is thriving.
So check for cross contamination, but also check for other issues that he could be having.

My husband is allergic to wheat, corn, soy, shrimp, shellfish and couple others that we dont eat ever so I cant remember what they are. My son has celiacs. We eat alot of ground meat or whole chickens or chicken breast with the bone in-its much cheaper than buying no bone chicken. We do alot of beans-watch out for kidney beans they have corn syrup in them and some canned tomatoes will too. I buy huge amounts of canned beans, canned vaggies, canned tomatoes, canned fruit, etc. Also potatoes are great for an easy cheap meal. I make my own butter-its cheaper when you are using it alot and its soft and spreadable. You take heavy whipping cream(aldis-1.87) put a dash of salt in and put it in the blender until it turns to butter-delish and easy. I store it in a sour cream tub.
rice chex, cinnamon chex, fruity pebbles and cocoa pebbles are gluten free, and made from rice-you would have to check for cornstarch though-I dont have any in the house right now.
when my first son went gluten-free we had to avoid everything that didn't specifically say gluten free. After he has healed we have found many things to add-even some with a manufactured in a facility with wheat labels. I would avoid for awhile and let yourself heal and then do some trail and error from there.
