      Substituting For Gluten Free Flour
I can't figure out how to change where my topic posts, so I hope I get some hits from this. But I enjoy cooking and have a lot of recipes whose only gluten containing ingredient is all-purpose or self- rising flour. I want to continue to make these recipes substituting gluten free flour. But I've read you can't just choose any type of gluten free flour to substitute for these and expect it to be pretty much the same. Can anyone advise to me on how to substitute? For instance, lets say I have a recipe requiring 2 cups of all purpose flour. What would I substitute that with. These recipes are not for baking breads.
Thanks for any advice you can give me!

I should add that I did get all of the other blood tests you can get for celiacs and they all came back negative, except for the one mentioned above that was positive.

Lol-lol-lol!!!! I love it! I do take this seriously and am very concerned about being told I have had a false positive. But I do agree that my doctor may be an idiot! I think I am going to go back to my pcp and ask her to send me to another gastro doctor for a second opinion. And yes Skylark, this is the same doctor that said I had ibs.

      Results Of Going Off Gluten
If you have celiacs or are gluten intolerant how does it feel? Let me specifically add my symptoms that I have. I do not have chronic diarrhea but do get constipation a lot and have issues with nausea after eating. I also get gas and bloating with fatigue. I have been diagnosed with ibs-d and fibromyalgia. If I were to go gluten free how would I know if it was working? Obviously, I would feel better. But should I expect a complete turn around and to feel great? Would my fibromyalgia be expected to go away? I am contemplating going on to get an endoscopy, but right now have some other medical bills coming in plus I am about to get a laparoscopy for something else I have going on. So I have medical bills coming in and am not sure I want to pursue an endoscopy at this time. But I can go gluten free to see if I feel better. (well, I have been gluten free for about 8 days now I think.) I still feel achy, but my constipation has improved a bit and nausea has gotten a lot better. Fatigue is still there but that could be due to some other pain issues I'm having. Plus I guess I could still have fibromyalgia plus celiacs or gluten intolerance. But my main question is what should I be feeling and how long should it take before I start to see major improvement? I am not one to expect a miracle. I don't expect I'll ever feel like I did before my health problems started, but I also want to understand what to expect. And need to decide if I should get further testing in the future. When I got the celiacs blood work done my Deamidated Gliadin Abs, IgA was high. It was 76 and over 30 was considered high. My doctor said it was a false positive.

I am in the process of working with a doctor to see if I have celiacs. I definately seem to have an intolerance to gluten, but I am reading so much about food allergies and how badly they can affect our bodies. Should I see my pcp and talk to her about getting tested for food allergies? I have health insurance. In others experiences, were allergy testing covered and what type of doctor did you see? I have been diagnosed with ibs-d and fibromyalgia and I am trying to find out if these are accurate and wonder if food allergies might be a culprit. Thanks for any input. I think my biggest concern is money. Is it worth it and how much did it seem to cost if covered under insurance? I understand that all insurance coverage is different.

      False Positive?
I recently posted my blood test results for celiacs disease. I met with my doctor today who said the positive test that I got was most likely a false positive and that I probably don't have celiacs. But he did give me another blood test today. It was called an endomysial Ab. The test that I showed positive for before was Deamidated Gliadin Abs, IgA 76 High units (>30 is moderate to strong positive. The others were negative. Has anyone else had any experience like this showing a false positive? I'm so frustrated because I had hope as to maybe finding out what is wrong with me.

      Fibro Or Celiacs
I was diagnosed with fibromyaglia in 2008. I was offically diagnosed with ibs in 2012; unoffically in 2008. I have been through a lot. This includes surgery, physical therapy, and many medications. Tomorrow I meet with my gastro doctor about a possible positive blood test result for celiacs. Has anybody else besides me been through heck and back? I'm so scared I will get a negative biopsy (assuming my doctor is willing to continue with to a biopsy based on my blood test results). What have you guys been through? Was it hard? I don't have chronic diarreah like a lot of ceilacs but have a lot of other symptoms. The test I tested positive for on my bloodwork was a Deamidated Gliadin Abs, IgA (it was 76-above 30 was considered high). Just wanted to get some input. I am only 34. My problems started was I was around 27. I was the kind of person other people though had a good future ahead of them. It hasn't turned out that way.

      Celiac With Constipation
I meet with my gastro doctor soon to discuss some blood test results I got back that may point towards Celiacs Disease. I am hoping to get sent in for a liver biopsy. I have been researching a lot about the disease and I have a lot of the symptoms. But one symptom I am questioning is diarreah. I do get bouts of diarreah but not as bad as I get chronic constipation with cramping. If I don't have severe diarreah is that a sign that perhaps I don't have Celiacs? I am often nauseas after meals with gas pain, but constantly have to take miralax, fiber supplements and even use suppositories to help with constipation problems. I want to be sure I have all the information I can before discussing all of this with my doctor. Thanks for any input.

I really appreciate the responses. Honestly, Mushroom, your wonderful explanation was a little over my head. I apologize if I sound ignorant. But atleast I got a possible answer. I meet with my doctor again on Wednesday to see what he says. Thank-you for the information. I'm sure I will continue trying to dissect it throughout the weekend! I may post again on this site if I have further questions. Again, thank-you. This is a bit scary for me but I would be very happy if I felt better.

      What Do Test Results Mean?
I recently got a Celiac Disease Complete Panel. I cannot get a response from my doctor as to these results. One result came back as high. Could someone please tell me what it means? I will post all the results in case that is needed.

      Celiac Disease Complete Panel:
      Immunoglobulin A, Qn, Serum 218 mg/dL reference interval 70-400

Deamidated Gliadin Abs, IgA 76 High units (>30 is moderate to strong positive)

Deamidated Gliadin Abs, IgG 3 units 0-19 reference interval

      t-Transglutaminase (tTG) IgA <2 U/mL 0-3 reference interval

Tissue Transglutaminase (tTG)has been identified as the endomusial antigen. Studies have demonstrated that endomysial IgA antibodies have over 99% specificity for gluten sensitive enteropathy.

      t-Transglutaminase (tTG) IgG <2 U/mL 0-5 reference interval

I am wondering what the High Deamidated Gliadin Abs, IgA means? Thank-you for any help.
