I have to say that I thought I was reading my own story! I have been suffering for 12 or more years. In fact, when I think back, I have had symptoms my entire life. I, too, saw so many specialists (several GI docs). I had at least 10 endoscopies trhroughout my life (never a biopsy until last month), every test imaginable and then some. I was told I had everything from IBS to Fibromyalgia to Lupus to Chronic Pain Syndrome. I have had 9 surgeries in the past 12 years for carpal tunnel, elbow and torn rotator cuff in my shoulder. (maybe related to celiac disease??) I have so many symptoms, as with you.
Yoou might want to try what elonwy suggested and eat all the gluten you can, get tested, have your biospy and then start your new life. I am not sure I could go through all that pain when is sure sounds like celiac disease to me. I would probably just charge ahead with the gluten-free life and end the pain cycle. If I had a clue about this 10 years ago, I would have given up my bread and pasta in a heartbeat! I have been to the emergency room too many times to count.
I am on my third week of the gluten-free diet and my headaches and backaches are pretty much gone. Same with the tummy problems and heartburn. Just waiting for my energy to come back, leg pains and other stuff to go away, and villi to repair themselves.
I contacted one of my local grocery stores, Albertson's, to ask about some of their name brand products and they sent a list for all their brands. It specifies gluten-free or not ... It is an Excel worksheet and long so I cannot paste it here but if anyone is interested, I will be happy to email an attachment.
I have been so irregular for the past 10 years. My new doctor thinks that celiac disease could be the cause of it. I go months and months without a period. I have had very low iron for years too. One doctor thought I was starting early menopause but the estrogen levels were normal. It would be interesting to find out if this is another symptom of celiac disease.
I agree with Kaiti. Everyone is different. I have only had one known reaction and it was within 30 minutes after eating. I am hoping I continue to do this right but I am sure to get glutened again. From what I have read here, it seems to happen to most people.
We just have to do our absolute best to stay gluten-free and learn from any mistakes that are made along the way. Good luck!
I haven't tried that brand yet. I am a bit scared to try another pasta as I had a reaction my second week to DeBoles corn spaghetti. That was my one and only reaction since starting 3 weeks ago. I bought some rice pasta to try but will still look for that brand on my next trip to the market.
I did notice some discrepencies in the Gluten Free Bible but some of the things it said was helpful. In my opinion, the best answers are given here. I like to read as much as I can so I can ask more intelligent questions. I feel pretty stupid since starting this three weeks ago.
I just wanted to share this with all of you. My husband ate the gluten-free dinner I made tonight and liked it! I was shocked because he hasn't wanted to try anything new. I am Italian and already missing my old meals. So, when life throws corn tortillas at me, I make lasagna! It was so good! I am not a gourmet cook or anything but this came to me and I threw it together.
I used all gluten-free ingredients, any brand would work fine. I call it Mexican Lasagna.
In a casserole dish, I put some salsa (the jar kind) on the bottom, then layered corn torillas, refried beans, ground beef (browned), onions, cheese, salsa. I topped that layer with more corn tortillas, salsa and cheese, green onions and olives. I baked it at 350º for about 45 minutes. It was so good! Next time, I might add some green chilis or something. I used mild salsa and it was a tad bit plain but it was still very good.
The great news was that my husband liked it and said I need to make that again.

I absolutely love the cereal that I found and have had no reaction to it at all. BUT since it does not specify that it is gluten-free, I just called the company to ask. They do not label it gluten-free because "it is processed in a plant that produces wheat products". However, he did say it there products are tested and if any cross contamination has occured, it has been 1 part to million. (I am just learning about this so I hope I worded it correctly.)
Here is the brand I use and their phone number if you want to contact them. Health Valley, 1-800-434-4246. I love the Rice Crunch-Ems. They are just like Chex cereal.
"Have you ever used a Gluten Home Test Kit?
I was over the moon when I discovered I could buy a gluten home test kit from Tepnel. On my travels, I had frequently been made ill by products marked 'gluten free' and desperately needed some way to test them.
It was slightly less exciting to find out that the test kit costs over £30 and could only be used 5 times. It only tested for >200ppm (200 parts per million), which is too high for my sensitivity.
I got a kit and tried it out, but the LCD screen was difficult to read and I couldn't really place any confidence in the results I got, so it was back to avoiding anything that wasn't made by Orgran, whose food I have never had problems with.
This was a couple of years ago, and I have just been back to look at the details of the Tepnel Home Gluten Test Kit (links to a pdf document).
It looks as if the test kit has changed, and now comes with a high sensitivity 16 ppm, as well as one for higher levels of 160ppm. This sounds much better, and I think I'll order one to try it out."

"I went out to eat last night for the first time since going gluten-free, and it was no fun. I felt like such a nag to the waitress. I wanted to cry. The guy sitting across from me was eating mozerella sticks dipped in marinara sauce, and my son had a hamburger with fries. Someone else had a club sandwich (my favorite!). I'm hoping that after awhile my addiction to food will subside and I will forget what all of those comfort foods tasted like I doubt it, but I'm trying to be optimistic."
I wanted to add a few thoughts. I just started three weeks ago and I know what you are going through! My husband will NOT work with me at all and eats everything I can't have right in front of me. BUT, guess what? I have had two really good days with very little back pain! Not only that, I have not had one day of tummy problems for two weeks! So, it is very much worth sticking to this new life.
My husband and I went out to eat this past weekend and it was wonderful! We went to Outback Steakhouse. I decided to skip the salad as it seemed that the people who had possibly been glutened there had all eaten the salads. I shared the wonderful brownie dessert with my husband and didn't feel left out at all. The waitress was absolutely wonderful!
I made a special shelf in my pantry for all my gluten-free foods and I do not mind looking at all the stuff I CAN'T have because there is a lot that I CAN have. I just found out that Lays Stax are gluten-free so I have a can just for me.

I am a long ways from being "healed" but I feel a little better each day. My energy still hasn't come back but I feel very confident that it will happen eventually.
I am new to this and was wondering 1) how did you find out that you are sensitive down to 31 parts? and 2) who sent it the University of Nebraska for testing? I eat Amy's stuff all the time and have not had any problems with it that I have noticed so I am very curious.
