Baffled By Little Caesars Pizza

I just signed up here because a questions be gnawing at me and I can't seem to find any answers. This seemed the best category to post under but if there is better please point me to it. I'm just a bit gluten sensitive while my mom has celiacs. She can have some pretty bad reactions within minutes of even small cross contamination. I'm not as strict with my diet as I should be and occasionally will eat quick food with gluten while out with friends.

From me straying from time to time I found that I never had any symptoms after eating Little Caesar Pizza. This was still shortly after my mom was diagnosed and I started to pay more attention to how I feel after I eat different food. So my mom, still dearly missing some gluteny foods, tried a slice after I told her how I thought it was odd as other pizza will wreak havoc on me. It's been awhile and we've return to that same Little Caesars multiple times and neither of us have had any noticeable problems from eating it.

My questions would be any ideas why something so obviously made with wheat, says so on their website, wouldn't give us problems(in my moms case acid reflex, nausea, fever, cramps, vomiting, and other intestinal distress), and can continuing to eat them still prove to be harmful?

TL:DR
Why would someone with celiac not be bothered by Little Caesars Pizza?
Can it still be harmful?

I was not impressed with their knowledge of gluten-free/Celiac Disease.

They are not knowledgeable about gluten intolerances, as I asked several different people and finally had to instruct the cook on how to prepare food for my family.
I Plan On Opening A Gluten Free Restaurant

I plan on opening a gluten free restaurant with bakery in Vancouver, WA. I want to know what foods people miss the most and would love to see on a gluten-free menu someday. Right now I am leaning toward like a comfort food cafe of sorts but I want to know if there is a larger need for some of the other types of foods.

Weather it be pasta, sandwiches, breakfast foods, soups, fancy entrees, or Stir-fry and Asian cuisine, also specific baked goods whatever you miss being able to go out and eat. Please let me know.

A little about myself:
I'm 26 and currently attending Le Cordon Bleu in Portland, OR. Last June I went off gluten shortly after the baking class at school as I had recognized a correlation between my energy and mood dropping when I ate gluten filled foods. I was also struggling to keep weight on so was turning to fatty high calorie snack foods such as Little Debbie to keep from loosing weight (little did I know then that they were not helping at all and actually hurting me more if I am Celiac). I feel so much better without gluten in my diet and now know when I have been glutened within minutes.

Mcdonalds Shamrock Shakes

Anyone have an experience with eating Mc Donalds Shamrock Shakes? I read somewhere that the mix for the shamrock ones did contain wheat. Although pretty much anything at Mc Donalds I usually stay away from as even their fries depending on what other things they fried that day in the oil they use causes me to get sick and hivey!

My Trip To Red Robin

This past weekend I went to Red Robin for my first meal out Gluten free. I asked for their gluten free menu and the girl only brought me 1 of the 2 printed pages. I only knew because I had looked up the gluten free menu before I left the house. I ended up getting a burger and instead of bread they wrapped it in lettuce. It sounded good in theory, but with all the mayonnaise they smeared on it (which I wish I would have thought to ask about) made it EXTREMELY messy to eat. Still, it tasted pretty awesome. I also got steamed carrots. When we got the bill, it did say GLUTEN FREE/WHEAT ALLERGY on the receipt next to my meal which made me feel better for some reason, like maybe they were extra careful.

All in all it was a pretty good experience. I’d go there again to eat another meal.

Italian In Nyc

Tony Di Napoli 43rd St. What an awesome meal yesterday. I called ahead 4 weeks ago and mentioned I had gluten free and vegetarians dining, no problem we have gluten-free pasta and vegetables. Called yesterday morning to confirm the reservation and gluten-free. Waitress was very educated and before I could ask she was spot on, you can't have that or you can. I did the ordering for our party of 6. Waitress placed all gluten-free platters in front of me and other platters at the other end of the table. Beautiful carefree meal, service is great and most importantly I felt safe what I was eating.

Eating At Restuarants

I've been gluten-free for 6 months. It took about 3 months for it to heal good enough. Luckily I'm not too sensitive and I can have stuff that is made in the same facility and use the same frier. If you are sensitive to that don't take my recommendations. I eat at certain restaurants regularly. My favorite is Cafe Brazil in Dallas area. Even though they don't have a gluten-free Menu there are still things I can order. I eat the Cheese or Chicken Nachos a lot. Make sure the chicken is seasoned with blackening. I eat the Veggie Migas a lot(no seasoning and with corn tortillas) Also there is a lot of eggs/omelets and so fourth. You have to make sure you tell them no seasonings on the veggies though. The black bean soup and Wine Country Salad(no seasoning) is good too. I love Cristina's Fine Mexican restaurant but I haven't seen anything gluten-free from them. I always get Brisket Tacos though(yummy). I like Pei Wei's gluten-free Spicy Chicken. They even have gluten-free Soy Sauce! Love Mi Cocina's gluten-free menu too! Cantina Laredo has their menu marked and they have an awesome Pollo and Cilantro Salad. Their queso and margaritas are great too! I have so many more I just can't name. If I do eat something contaminated I WILL notice it the next morning. So I have a start with my eating out so far. Any other suggestions are appreciated.

Gluten Free Menus

Has anyone else noticed that when you ask for a gluten-free menu in a restaurant, they take away your regular menu and hand you a print out of some sort with no prices on it?

Why do they not have prices, you might ask? My best guess is that gluten free food is so darned expensive that they figure if we have to ask the price, we can't afford to eat gluten free! Either that, or you have no choice but to eat from the gluten-free menu so price does not really matter???

I always ask to keep the regular menu in addition to the gluten-free menu and have pointed out in most restaurants where this happens the fact that their gluten-free menus are lacking more than just toxic ingredients.

Virgil's Bbq In Nyc

Before I was diagnosed, we used to eat at Virgil's BBQ sometimes when we were in NYC and loved it. But when I went gluten-free, I stopped eating there because their barbecue sauce contained soy sauce. Recently, though, my mom suggested we eat there and I thought it was worth a try to see if they'd changed the menu in the past six or eight years, so I looked online and found mentions of them having a gluten-free menu, then called to confirm. I stupidly figured that if a barbecue place said they had a gluten-free menu, that would mean I could, you know, eat some barbecue there.

Well, when we showed up, first off it turned out they didn't have the printed menus because they're having them redone. Fine, that's responsible of them. The waiter seemed to know the menu well and be well informed about what contained gluten. But the barbecue sauce still has gluten! So basically I could have meat without sauce, which is not exactly what I'd expect when I'm told by a barbecue restaurant that they have a gluten-free menu.

That was disappointing, but my mom and I were fine with just saying thanks, but we're leaving. Then as we got up to go, the waiter started trying to persuade us to stay, even employing the "you can have a salad" line. Thanks, but in Manhattan, I can do better. Then he sent a manager-type over to argue with us! I ended up feeling really stupid because I'm standing there trying to get my coat on and collect my things, having a yelling fight with someone I didn't want to be talking to to begin with.

It was so obnoxious I had to come here and report on it. Honestly, there are many towns where the gluten-free options they have would be welcome and stand out. But in Manhattan, you just have to do better if you're going to say anything more to people than "we can tell you what menu items are naturally gluten free, but almost everything contains gluten." So, if you're in Manhattan and you want barbecue, go to Blue Smoke and don't believe Virgil's when they tell you you can eat there.

How To Ask If Food Is Gluten Free In Restaurants

So I'm a newly diagnosed celiac, and I love to eat out. I'm not even a particularly shy person either; I'll ask for substitutions for food, have sent food back (rarely), ask questions, etc to my waiter/ress. However, I'm feeling lost as to what to do when I'm at a non-chain restaurant, and there's dishes that I suspect might be gluten free, exactly how do I go about figuring out what is or isn't?

Like, if no one working at the restaurant knows what being a celiac entails, then I suspect they'll have a very hard time finding out if something is indeed gluten free unless I give them a huge comprehensive list of things, or if they make everything from scratch (and that means everything!). I'm particularly worried about sauces. I can't just go in and say 'absolutely no wheat' because that doesn't cover everything. Is it better to call ahead of time, or should I ask the waitress? I could bring a list of ingredients that they could compare it to, but that list would by necessity be GIANT.
Ideally, I could get an ingredient list for each dish from them, so I can determine it for myself, but that seems unlikely to happen. (Besides which, it doesn't help me choosing new items off a menu; I'd need the entire menu's ingredient list if I wanted to figure something out!) The local restaurants I'm thinking of won't have the same sort of ingredient/allergen menu that large chains have.

I don't want to avoid perfectly tasty gluten-free food because of suspicion, but the entire process of figuring out if a dish is safe seems incredibly unwieldly :-(
