		<description>Does anyone else have digestive issues with carbohydrates in general-apart from the ones containing gluten? Potatoes bloat me up, even rice. I have found a low carb diet is the only way I can lose weight. I used to think I was carb intolerant, but now pretty sure its the glute. Besides, how can you live without even a few carbs. If I didnt have my glutino toast for breakfast I would go crazy.</description>

		<description>Hi, this is my first posting, so sorry if I cross any lines through ignorance.  I was diagnosed as celiac over a year ago, so no gluten grains, have a pork allergy, so no pork, am intolerant to egg whites, corn, rice, oats, apples, coffee, tea, sweet potatoes, among many others, and chocolate and citrus gives me migraines, so none of that!  Soooooooo, breakfast has become a hugh obstacle for me.  Any recipes?????? This seems to be my hardest meal of the day:(</description>

		<description><![CDATA[Does anyone know why gluten free bread has a distinct weird smell to it?  I bake homemade gluten free bread for my daughter and had tried several different recipes, but they all have that weird smell/taste.  I am currently using Sorghum flour, rice flour, Tapioca starch/flour, and/or potato starch.  I feel bad she has to eat this stinky stuff...<br />

		<description><![CDATA[Here is one of my favorites that even my non-celiac friends ask for - use your favorite lasagna recipe and substitute sliced eggplant for the noodles. Peal and slice the eggplant about 1/4 inch thick. Parboil the slices for about 1 minutes. You don't want them too soft. Pat dry. Assemble the lasagna and baked just as you would with noodles. It's delicious and it doesn't give that stuffed feeling like the noodles do.]]></description>

		<description><![CDATA[Since I sub for a single class at a local college I don't work often, but today is one of my lucky days I get to spend sharing my wealth of knowledge. Okay, it isn't that illustrious, I actually just sit at a desk reading my ebooks and waiting for people to have questions. Anyway, in the past I've always brought a sandwich for lunch with some fruit or something. It's always just the right thing to get me through my day and to dinner without feeling like I may gnaw off my arm before I go home. <br />

Today, instead of a sandwich I am enjoying a salad and chocolate tapioca pudding. (which is divine by the way) Why? Because yesterday I wanted a sandwich for lunch and didn't consider the fact that I was using my last two slices of bread. All of the local stores that carry Udi's close at midnight or earlier and I didn't realize until about 15 minutes past midnight that I have no bread in the house. When I got to the closest 24 hour store the only bread they had was $7 and I almost died right there in the aisle. Instead I picked up a mix which turned out to be awful. (Okay, not totally inedible but certainly not anything I can make a sandwich with.)<br />

The bread I got and liked was Udi's whole grain and I am wondering what mixes anyone could recommend that would be similar in texture and taste. I do intend to learn to make bread without a mix but for now I want to see what sorts of things I like before I start experimenting. Any suggestions for what to try would be greatly appreciated.]]></description>

		<description><![CDATA[My son, the one who is gluten free, loves the yellow rice that we get from our local Cuban restaurant.  Anyone know how to make this at home?  I feel stupid for asking, but is there such a thing as raw yellow rice that you cook up or is it regular rice with seasonings?  I saw the Vigo brand in the store and it did appear to be gluten free but I didn't like all the additives - MSG and dyes.]]></description>

		<description><![CDATA[I can't remember where I found this recipe...it was via a link on twitter to someone's blog that linked to another blog...you know how it is sometimes. <br />

Anyway, I made them yesterday -- they are seriously good and it didn't take much time to throw them together. I didn't have green onion so left it out and I had to use dried cilantro because I wasn't going out to hunt for fresh (it was hovering around 0 degrees F not including windchill...!) I substituted gluten-free flour. I think I'd up the season salt a bit since we like things with a little more 'kick'...or maybe having the onions would make up for it.<br />

Cheesy Quinoa Bites<br />
Makes ~24 bites<br />
<br />
    2 cups cooked quinoa<br />
    2 large eggs<br />
    1 cup shredded carrot<br />
    2 stalks green onion, diced<br />
    2 cloves garlic, minced<br />
    1/4 cup chopped fresh cilantro<br />
    1/2 cup grated Parmesan cheese<br />
    2 Tbs all-purpose flour<br />
    1/2 tsp seasoning salt<br />
    1/4 tsp freshly ground pepper<br />
<br />
1.  Preheat oven to 350 degrees.<br />
2.  Mix together all ingredients.<br />
3.  Distribute mixture into a greased mini muffin tin, filling each cup to the top (about 1 heaping Tbs each).<br />
4.  Bake for 15-20 minutes.]]></description>
