		<title>Brain Fog</title>

		<description><![CDATA[I am an undiagnosed gluten sensitive person - blood tests came back negative, no severe GI symptoms.  But I do have malabsorption, skin problems, neurologic symptoms, fatigue, and depression.  I am 1 year gluten free.  What I'm noticing lately is that my brain fog is back.  While I am not crazy careful about my diet, I do my very best to be completely gluten free.  I live alone, so there is definitely no gluten in my house - I cook my own meals 90% of the time and only go to restaurants with dedicated gluten free menus (i.e. P.F. Chang's, Outback, Jason's Deli, etc).  I was eating a bit more carbs in the past couple of weeks, so I'm trying to cut down on that.  I have had problems with yeast in the past and I have a feeling that is what is causing this.  My question is, is there there anything that will get me past this brain fog stage faster?  My coordination is terrible and I just feel "out of it" all the time.  As an example, it is taking me twice as long to type this because my fingers just won't seem to find the keys correctly (I normally type over 50wpm).  I forget things constantly and it's starting to really impact me at work (I'm in a new job and being forgetful is just not a good thing when you are trying to impress a new boss).  Any suggestions would be appreciated.  Happy Wednesday everyone!<br />

		<description><![CDATA[Hi everyone<br />

I am a vegetarian, trying to eat sufficient protein which is somewhat challenging given that I cannot tolerate Soy Protein and many pulses. <br />
<br />
At the end of last year my staple high protein, low fat food, Quorn, changed their recipe to include Pea Fibre.  I quickly, and painfully, discovered that I had a problem with pea fibre.  <br />
<br />
Has anyone else had a problem with pea fibre?<br />

		<description><![CDATA[I know I've seen a few folks on the forum mention what they considered a confusing reaction: having more problems with highly processed corn, like cornstarch, than with corn itself, even if you ate <em class='bbc'>more</em> of the corn itself.<br />

If that is an issue for you, you might want to go check out sulfite sensitivities/allergy. Many processed corn derivatives contain sulfites (citric acid, dextrose, and cornstarch, to name a few), so small amounts of corn derivatives could give a reaction when plain corn might be just fine.<br />

But with so many corn derivatives containing sulfites, it can seem very much like corn is the culprit.]]></description>

		<title>Need Help With A Diet</title>

		<description><![CDATA[Hi. I've been sick for over 2 years now, and right now my Dr. thinks it is very possible that I have Celiac. The genetic blood test was positive, but the other Celiac tests, including endoscopies were negative. However, I have had a positive for a gluten intolerance as well as many many other food/chemical intolerances ((Company Name Removed - They Spammed This Forum and are Banned) test). I've also tested positive for Epstein Barr as well. I've been avoiding gluten for a little over a year, with a few minor setbacks here and there. I've also been avoiding dairy, corn and vinegar, and a few other things. I'm still not feeling well, and I do still have reactions almost everyday. Most are mild, but it is still frustrating. After 2 years, I still don't know what I react and don't react to, besides gluten, dairy, corn, and vinegar. And now I'm not even sure about those anymore since I've been avoiding them for so long. I'm currently waiting on getting more tests done (MRI of my intestines, more bloodwork, and possibly another endoscopy). My Eosinophils were high, so my Dr thinks that I may have something other than Celiac, or in addition to Celiac. He thinks I may have some kind of disorder of my intestines, since the eosinophils were high. Have any of you had the same experience in having a high eosinophil count? I would assume that a lot of you may, since eosinophils represent an allergic reaction of some kind. Isn't that normal for Celiac? Anyway, I have not cleaned out my makeup, skincare, shampoo, or any of my regular toiletries that I normally use. I'm not sure if they are all gluten-free, but I don't see anything that stands out to be gluten in the ingredients. I don't want to go nuts getting all new products unless it truly is going to harm me. It looks like there has been mixed reviews on here about whether you can get glutenized by  these products. It stresses me out to think about having to find all new products and spending lots of money if it is not a necessity. <br />
I currently take Enzymedica Digest Gold w/ probiotics. I want to be in control of what is happening to my body and to heal myself and feel better. I want to get to the point where I know what I can eat without having a reaction. I don't remember what that is like anymore. I usually do well when I eat more bland (brown rice, veggies, fruit, meat), but even then I still feel like I'm reacting. And it is hard to do day after day. Especially when I'm still reacting; it makes me feel hopeless and like it is a waste. It's just a bearable, more tolerant reaction. Reacting, whether it be mild to moderate has became the norm for me, sadly. But, believe me I would do anything to not have to live like this anymore. I just don't know which route to take anymore at this point.<br />
So, what I was wondering is....what is the best diet that will heal me, make me feel better, as well as be able to figure out what I can eat? Also, something that doesn't take up a lot of time and money, as these are very limited in my life. Is there an elimination diet out there that I can just follow? What about the Paleo or GAPS diet? What are the differences and pros and cons of each? I really need to start some type of strict diet very soon, as I am out of patience, sick of feeling like crap, and really frustrated. I want my life back. Any advice, suggestions, opinions would be greatly appreciated! Thanks!<br />

		<title>Corn - The Under-Researched Grain</title>

CORN - this topic has been on my mind since a few days, finally i am getting it here. There have been articles time and again about corn being the under researched grain for its gluten can also cause issues similar to wheat gluten. For me, my DD who is a celiac (diagnosed 1 yr back, TTG IGa levels still high, will be testing this month again) has shown following symptoms with various forms of corn:<br />
<br />
 * Diah when taken steamed frozen corn - stopped that completely<br />
 * Can have pop corn without issues - i give her pop corn once in a while as it is one of most loved snacks.<br />
 * Doesn't even show diah symptoms when ingesting gluten due to gluten cross contamination which we discovered only after 8 motnhs of diagnosis but perhaps that was good enough to keep her antibodies levels high.<br />
<br />
My specific questions are below:<br />
1. How has corn effected different people here on this forum?<br />
2. Do you have specific evidences of having antibodies levels normal only after stopping corn, given all other cross contamination issues were resolved prior to stopping corn completely?<br />
<br />
Why i am asking these questions - It took me a long time to resolve my daughter's cross contamination issues, i have her blood tests due in 2 weeks. Can i expect normals levels now after having put all the hard work or corn could be playing a role. I just want to be mentally prepared, her blood tests make me nervous and my stress already begins.<br />

		<title>Egg Intolerance</title>

		<description><![CDATA[Since going gluten-free I have started experiencing bouts of intense nausea, more and more frequent.  Thought it might be blood sugar, so I had tests including a 3-hour OGTT, all came back normal.  So I tried eliminating eggs for 2 weeks (I started eating a LOT of eggs when I dropped gluten), and continued to have other symptoms and pains, but not so much the nausea - though occasionally that too.<br />
<br />
Today I ate a scrambled egg as a test and ten minutes later was almost doubled over with nausea and stomach cramps.  Almost five hours later, still nauseated/cramping pretty badly, though not as severe.<br />
<br />
I may wait and try it again to see if it was a fluke, because I suppose it could have been a delayed reaction to something else, although I didn't eat very much this morning before the egg.  I'm just wondering, for those who have had other food intolerances, if your reaction was like this.  I did not have any ... er ... bathroom symptoms.<br />

But the bottom line is that neither on gluten-free sites nor on the general web does there appear to be easily accessible information about whether to expect that items with "milkfat"  listed among the ingredients should be expected to have casein in them.  Why not??   I am absolutely mystified as to why there isn't much more readily available information on this.  I don't know the process that is used to extract milkfat; I understand that perhaps 100% purity (i.e. absence of casein) might not be something to rely on, but where are the pages stating one position or another and giving the reasons why?<br />

I notice that some Ghirardelli chocolate bars that I have list "milkfat" among the ingredients, but it is not bolded like the other allergens in the big 8 (for example, Ghirardelli prints "soy" in <strong class='bbc'>bold</strong>).  <br />

I was taking vitamins for nails and hair. It stopped the hair loss, but my vitamins were just masking the symptoms. My palpitations and night sweats went away after the first month on the Paleo diet (no gluten and no grains).<br />
<br />
Rice does not have gluten, you are correct. However, there is a thing called cross-reactivity. Do you know why most gluten sensitive people develop lactose intolerance after going gluten-free? Because lactose has a structure similar to gluten and the body thinks it is gluten and attacks it as such. <br />
<br />
So I would eliminate all grains and potatoes, because the structure is similar to make sure you do not have cross-reactivity. After a week on this diet you will either feel the difference or not. If you do not feel it, go back to gluten free grains, legumes and everything else. If you feel the difference, I would suggest to stay on this diet. It will help you to answer the question - how long before you know it. Also, just so you know, most shampoos, soaps and make up have gluten. Make sure to use gluten-free while you are trying to figure out what you have.<br />

I found that many different spices and even table salt have additives to prevent clumping. They don't even list them on the ingredients! <br />
<br />
Oh, and Hashimoto is closely related to gluten - most autoimmune diseases go together. <br />
