Hello Everyone!  I was just diagnosed on Feb. 2/12!!  And, BOY, am I learning a lot!  Like many of you, I'm sure, I was diagnosed over 25 years ago with IBS.  I am so new at this and slowly feeling my way.  I do have a friend with Celiac and another with a child who has to have a gluten-free diet.  <br />
<br />
Anyway, my husband and I have a 2-week trip (already paid for) to a resort in the Dominican Rebulic. It is all inclusive and most meals are buffet style.  <br />
<br />
Does anyone have any ideas about the kinds of things beside fruit, eggs, meat (not breaded), rice -that I would be able to have?  <br />
<br />
We have been to this resort before and know that they do NOT have fresh veggies - only salads in cream sauces, and bean salads (also in liquid).  I also have an intolerance to cheese and a few other dairy.<br />
<br />
Do you have any food suggestions about what I could take with me?<br />
<br />
I appreciate any and all advice!  This is a whole new journey for me.  While I am no longer in shock surrounding the diagnosis, I am definitely still in shock about the cost of the products!! SERIOUSLY!!<br />

		<description><![CDATA[Figured I should make an intro post and say hi to everyone. <img src='http://www.celiac.com/gluten-free/public/style_emoticons/default/smile.gif' class='bbc_emoticon' alt=':)' /> I am 26, was diagnosed with Celiac nearly three years ago after only four months (no thanks to my doctors, only to my pushing for it!) and am happy to feel good these days. <img src='http://www.celiac.com/gluten-free/public/style_emoticons/default/smile.gif' class='bbc_emoticon' alt=':)' /> I'm a rather crazy dog person and photographer based in Southern California - and I've jumped into the blogging world recently, too. After several friends going gluten-free and changing their life, I figured it was finally time to jump in and embrace the fact that I want to help people in their gluten free journeys! 		<title>Recently Started gluten-free Diet</title>

		<description><![CDATA[Hello everyone! I have recently started a gluten-free diet because I've become so fed up with taking medication for problems which I'm pretty sure are directly related to my intolerance to gluten/dairy. I've been diagnosed with ADD (which I'm pretty sure I don't have), I've had gallbladder, bladder, and gastrointestinal problems my whole life, and the past few years I've had a consistent bout of fatigue, brain fog, and memory loss.  To say the least, I've been fed up and am finally sticking to a Gluten-free Casein-free diet in an attempt to feel normal and healthy again.  I've been on the diet for 2 weeks now and I just have a few questions for those who have taken this path before. 1.  Did you notice dizziness in the first weeks of starting the diet? (I've been so dizzy at times that I can barely stand up). 2. Did anyone notice an increased sensitivity to caffeine (specifically to coffee)? (Before going gluten-free I could drink 3 cups of coffee without noticing a difference, now I just drink a few sips and I'm bouncing off the walls). 3. Did anyone have increased gastrointestinal problems (diarrhea, stomach pains, gas) in the first weeks of going gluten-free?  <br />

Sorry for the incredibly long post.  Even though going Gluten-free Casein-free is extremely difficult (I'm also living in a foreign country which adds another layer of difficulty), and I'm just looking to communicate with others who have gone through this before.  I'm still not certain if dairy and gluten are the only culprits, but I'm excited to see if this diet can make a difference <img src='http://www.celiac.com/gluten-free/public/style_emoticons/default/smile.gif' class='bbc_emoticon' alt=':)' />]]></description>

		<description><![CDATA[Hello everyone, I am 23 year old woman, who more than likely has gluten sensitivity, and possible Celiac Disease. Over the past few months I've had horrendous stomach cramps, bad excema, and exhaustion. For my excema, my doctor gave me some steriod cream which has only helped minimally. I've switched laundry detergents, with no results.<br />

He sent me over the asthma and allergy clinic, and they said I'm now allergic to grasses and molds, which I knew, but they also did say, that gluten could be a great contributor to these symptoms. They want me to start a 4 week gluten free diet and see if I should have improvement. If so, keep with the diet. If not, come back?<br />
<br />
I also have possible PCOS too so I'm not sure how that is going to play in to all of this.<br />
<br />
Anyways,I hope to get some good info from here!]]></description>

My name is Nick. I was diagnosed with celiac disease about 2 months ago. I'm a 23 year old college student and can say that the transition has been anything but easy. Living life always on the run has made removing gluten from my diet a very difficult process. However, after a year of testing me for liver damage to peptic ulcers, I'm just glad to finally have a conclusive answer. I think my doctor was starting to believe I was crazy. Just wanted to say hey to everyone, I'm sure I'll be on here quite a bit as I have loads of questions. 		<description><![CDATA[HI my Name is Natalie i was diagnosed with coeliac disease 6 yrs ago and so was my eldest son i was 32 at the time, i was diagnosed after a life threatening bout of pneumonia, and asked to be tested as my eldest sister had been diagnosed because of her diabetes, all i knew is i had been sick my whole life and if I had it wanted to start diet and finally get better and that I did. I was then later diagnosed with lactose intolerance and fructose malabsorption. and I am sure i am not the only one out there with all three.<br />

So, as everyone (or the majority of the users here), I've been diagnosed with Gluten allergy. To be honest, at the beginning, I took it really badly for two reasons:<br />

<ul class='bbcol decimal'><li>I already have other allgies (like most of you), but ones that have been quite new. The weirdest one was when eating salmon caused me an anaphylaxia. Later on, I was told by my doctor, that when the fish is not killed instantly, its system releases a substance similar to adrenaline that runs in its muscle and flesh as long as it remains alive, and doesn't disappear when it dies. And it appears, it's something that is highly allergenic. I honestly thought it was a joke. But well, in short I was already paying attention to what is in my plate. <br /></li><li>I LOVE bread. It may sound stupid, but i ate bread at every single lunch. I know there are gluten-free breads' recipes, thank Lord. I'm going to buy a bread machine on boxing days and start my quest for the perfect recipe.</li></ul><br />

I had been sick for several months, but I spent the whole month of November without eating (well, only a veggie soup a day and tea), while the "doctors" I have here in Canada tried to decipher why I couldn't digest anything. It's actually my doctor from France who thought of Gluten allergy or Celiac disease. He told me to try to eat gluten-free. So I started to eat a bit more again, all gluten-free, and I'm feeling better now. I'm still learning what I can eat or not. Though, I noticed that I cannot drink Coke or Sprite, it makes me sick again. <br />
I will go back to France for a week to see a specialist and run all the tests, as here, you need to wait for at least three months (and it's more likely that the waiting period is going to be longer) before getting an appointment  <img src='http://www.celiac.com/gluten-free/public/style_emoticons/default/dry.gif' class='bbc_emoticon' alt='&lt;_&lt;' />  <br />
